Day 135 – Butterfinger Cupcakes

Ok.  I used to LOVE Butterfinger Candy Bars (I say ‘used to’ cause I try not to eat whole candy bars anymore…I try).  I mean, they were the “in” candy when I was young (especially as a product of the 80’s – thanks to Bart Simpson).  Peanut butter and chocolate.  How could you go wrong?  So, when I saw these Easy Butterfinger Cupcakes (recipe below from Fast and Easy Recipes), the kid inside me got REALLY excited!

Chocolate-Cupcake

The cakes are very thick and dense. The are moist, but not sticky or wet.  They have a very strong coffee flavor, which almost overpowers the chocolate.

Note: The minis were a no-go. The ones that did come out of the pan whole quickly tipped over or fell apart on the cooling rack. They were never gonna survive 2 fillings and a frosting. Guess we’ll just have to make do with full-sized cupcake goodness!

Fillings

The peanut butter filling is thick and smooth.  It has a strong peanut butter flavor.

The chocolate filling is a lot like a ganache in texture, very smooth and creamy.  It has a semi-sweet flavor with just that small added hint of sweetness from the corn syrup. It doesn’t make it any less dark, but a little sweeter.

Butterfinger-Frosting

The peanut butter frosting is smooth and very easy to pipe.  It has a much lighter, sweeter peanut butter flavor than the filling.

They definitely make you think of a Butterfinger! That is an accurate description. I still wish there was slightly less coffee flavor, but it does give it a depth when put with the fillings and the frosting that works nicely together. This is a giant cupcake. A lot going on. Be prepared. Use a fork.

Note: The paper cups pull a lot of cupcake with them when you peel, so I’d give ’em a good spray before putting the batter in.

Note: I’m not sure that “easy” is an appropriate title for these. While nothing is particularly difficult, they are time-consuming and dirty tons of dishes.

Scoring Sheet:

  • Cupcake Taste: 3.5
  • Frosting Taste: 4
  • Overall Taste: 4
  • Appearance: 4
  • Ease of Making: 3 (there are technically 4 parts, so it is a little lengthier of a cupcake, but none of them are difficult)
  • TOTAL: 18.5

RECIPE

Easy Butterfinger Cupcakes (recipe from Fast and Easy Recipes)

Cupcakes:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened Dutch-process cocoa powder, sifted
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 tbsp finely ground coffee
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cup buttermilk
  • 1 cup of Butterfinger candy bars, chopped into chunks

Peanut Butter Filling

  • 1 tbsp unsalted butter
  • 1 tbsp smooth peanut butter
  • 1/4 cup half and half or heavy cream
  • 1/4 cup peanut butter chips

Chocolate Filling

  • 2 1/2 ounces semi-sweet chocolate
  • 2 tbsp unsalted butter, at room temperature
  • 1 tbsp corn syrup

Peanut Butter Frosting

  • 2 cups confectioner’s sugar
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup creamy peanut butter
  • 2 tbsp milk
  • 2 Fun Size Butterfinger candy bars, chopped
