Day 129 – Double Vanilla Cupcakes

It has been rainy and gross for the last 2 days.  Yuck!  Not inspirational at all.  But today the sun finally returned!  (It didn’t bring any warmth with it, but it’s better than rain.)

So,  I thought these Double Vanilla Cupcakes (recipe below from Simply Recipes) were just the thing to go with my sunny mood.

Vanilla-Cupcake     Mini-Vanilla-Cupcake

The cupcakes are dense and a little sticky, but not moist. Very squishy – like angel food cake almost.  They have a very simple, light flavor. Nothing complicated or strong.


The frosting is a good buttercream consistency. Easy to pipe.  It has a nice, smooth vanilla flavor. Not overly strong either, but nice.

Together they bring out the vanilla in each other. It’s still not terribly strong, but that’s kinda what vanilla does. It’s a nice, light vanilla cupcake. Nothing fancy. No frills. Just a simple cupcake.

Notes: The minis are slightly tougher in texture than the full-size, and have slightly less flavor, but aren’t a bad alternative.

Scoring Sheet:

  • Cupcake Taste: 3.5
  • Frosting Taste: 3.5

  • Appearance: 3.5 (the vanilla bean speckles are very pretty)

Double Vanilla Cupcakes (recipe from Simply Recipes)


  • 1 ½ cups + 2 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 1/4 teaspoons baking powder
  • 1/2 cup unsalted butter, room temperature
  • 1 cup sugar
  • 1 egg plus 2 egg whites
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • 1 1/2 teaspoons of vanilla extract
  • 1/2 vanilla bean (or one whole bean if you can spare it)


  • 1/2 cup unsalted butter, room temperature
  • 1 1/4 cups of powdered sugar
  • 1/2 vanilla bean (or 1 teaspoon of vanilla extract)
