Day 364 – Strawberry Lemonade Cupcakes

Today is the last competitive cupcake.  Wow.  That’s a lot of cupcakes.  It called for something sweet.  Maybe tart.  And, cause it’s still summer, something refreshing.  Strawberry Lemonade Cupcakes (recipe below from The Cake Blog).

The cupcakes are dense. A very solid cupcake. Nicely moist, but not wet. They are extremely tart. Like, sour lemon candy tart. Wow! Literally pursed my lips with the first bite.

Strawberry-Frosting

The frosting is smooth and creamy and soft. It has a nice pink color with pretty flecks of red. It has a strong buttercream flavor (as in butter and sugar) with a really light strawberry flavor. I want more strawberry to shine through in the end, but it’s nice and light and sweet.

The cupcake is still very, very tart. A lot stronger than the frosting. The frosting does add a little creaminess, but you’d have to pile it on to cut through the tart lemon flavor of the cupcake!

Lemonade Cupcakes:

  • 2 sticks unsalted butter, room temperature
  • 2 cups sugar
  • 4 eggs
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup lemonade powder mix
  • 1 cup milk
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla

Strawberry Buttercream:

  • 2 sticks unsalted butter, room temperature
  • 4 cups confectioner’s sugar
  • 3 tbsp strawberry puree
  • 1 tsp lemon zest
  • lemonheads

Day 348 – Smores Cupcakes

Today marks the last birthday of this crazy birthday-filled week.  Today is my cousin, Nick’s, birthday.  Yup.  He was born a day (and several years) after me.  I hated him for it for most of our childhood.  I’m over it now.  Clearly, as I decided on one of my favorite kinds of cupcakes for his bday.  S’mores Cupcakes (recipe below from The Cake Blog).

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are fairly dense, but still squishy. They’re sticky. Like stick-to-your-teeth sticky. They have a nice, sweet chocolate flavor. Not bitter at all. Quite sweet.

Marshmallow-Frosting

The frosting is light, airy and fluffy. It almost has the consistency of a strong whipped cream. Or Cool Whip. It has a sweet marshmallow flavor. Very sweet.

This cupcake is very smooth and very sweet. I’d like a little bit more crunch in my S’mores cupcake, but the flavor is undeniable. This is for the S’mores lovers who are more about the chocolate and marshmallow, and less about the graham cracker. If that’s you, these are amazing! They are smooth and soft. Gooey. The chocolate and marshmallow fluff complement each other really well. And they’re adorable. A great option for a party or get-together.

Chocolate Cupcakes:

  • 3/4 cup unsweetened cocoa powder
  • 1 3/4 cups sugar
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 cup hot water
  • 1 tsp vanilla

Marshmallow Buttercream:

  • 2 sticks unsalted butter, room temperature
  • 1 (7 oz) jar marshmallow cream
  • 1 cup confectioners’ sugar
  • 1/2 tsp vanilla extract

Day 341 – Honey Cupcakes with Honey Cream Cheese Frosting

Honey Cupcakes with Honey Cream Cheese Frosting (recipe below from The Cake Blog).  Sure.  It sounds like a lot of honey.  But can you every really have too much honey?  Nope!  I didn’t think so!

Honey-Cupcake     Mini-Honey-Cupcake

The cupcakes are fairly dense and chewy. They are slightly oily, but not greasy. They have a very sweet flavor. I’m not sure I would nail it down as honey, if I didn’t know that’s what was in them. But they are sweet like honey, so it all makes sense.

Honey-Cream-Cheese-Frosting

The frosting is soft, but stable, and very creamy. It has a nice, sweet honey-cream cheese flavor. Simple and to the point.

When you put them together, honey is the obvious star of these cupcakes. They are sweet and smooth with a strong honey flavor. Still very simple and to the point. And a nice little something different. Honey is occasionally a player in cupcakes, but rarely the star.

Day 330 – Ice Cream Cone Cupcakes

Today is the last day of school here in New York.  To celebrate this momentous occasion, I knew we needed something fun.  Something over the top FUN!  And just wait til you see how fun these Ice Cream Cone Cupcakes (recipe below from The Cake Blog) are!

Vanilla-Cone-Cupcake

The cupcakes are springy with a good moistness. They have a sweet, vanilla cake flavor. They’re really sweet. But not in a bad way.

Note: I obviously couldn’t find a way to make mini versions of these cupcakes.  So full-sized are the only options.  Darn…

Vanilla-Buttercream

Vanilla Buttercream: The frosting is thick and smooth. It tastes a lot like the inside of an Oreo. Sugary vanilla flavor, with that shortening aftertaste.

The cupcake with the basic vanilla frosting is very, very sweet. It’s got a nice, strong vanilla flavor, with a good texture. Very moist. These would be adorable for any party or summer together. And, if you follow the original blog recipe, you can set up a station with different frosting and topping options. So much fun!

Chocolate-Chip-frosting

Chocolate Chip Buttercream: This one tastes a little bit like cookie dough, thanks to the sugary sweet frosting, mixed with chocolate chips.

Chocolate-Frosting

This frosting is smooth and creamy. It tastes a lot like chocolate ice cream. This one is a lot less sweet than the others, thanks to the unsweetened cocoa.

Note: The website has ways to take the Vanilla Buttercream and make it into different frostings. I made 2 of them, but they also have Mint Chocolate Chip, Strawberry and Cookies & Cream.

  • 1/2 tsp salt

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup milk
  • 1 tbsp vanilla
  • 30 cake cones

Vanilla Buttercream:

  • 3 sticks unsalted butter, room temperature
  • 1 1/2 cups vegetable shortening
  • 1 tbsp vanilla
  • 9 cups confectioners sugar
  • 1/4 cup milk
  • pinch salt

Chocolate Buttercream:

  • 2 cups vanilla buttercream
  • 1/4 cup unsweetened cocoa powder

Chocolate Chip Buttercream:

  • 1 cup vanilla buttercream
  • 1/4 cup mini chocolate chips
