Day 364 – Strawberry Lemonade Cupcakes

Today is the last competitive cupcake.  Wow.  That’s a lot of cupcakes.  It called for something sweet.  Maybe tart.  And, cause it’s still summer, something refreshing.  Strawberry Lemonade Cupcakes (recipe below from The Cake Blog).

The cupcakes are dense. A very solid cupcake. Nicely moist, but not wet. They are extremely tart. Like, sour lemon candy tart. Wow! Literally pursed my lips with the first bite.

Strawberry-Frosting

The frosting is smooth and creamy and soft. It has a nice pink color with pretty flecks of red. It has a strong buttercream flavor (as in butter and sugar) with a really light strawberry flavor. I want more strawberry to shine through in the end, but it’s nice and light and sweet.

The cupcake is still very, very tart. A lot stronger than the frosting. The frosting does add a little creaminess, but you’d have to pile it on to cut through the tart lemon flavor of the cupcake!

Lemonade Cupcakes:

  • 2 sticks unsalted butter, room temperature
  • 2 cups sugar
  • 4 eggs
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup lemonade powder mix
  • 1 cup milk
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla

Strawberry Buttercream:

Day 356 – Sprinkles’ Strawberry Cupcakes

These Sprinkles’ Strawberry Cupcakes (recipe below from Happy Homemaker Me) look like simple, sweet strawberry cupcakes.  And, as we near the rich, indulgent ending of this year of cupcakes, I thought sweet and simple could be lovely.

Strawberry-Vanilla-Cupcake     Mini-Strawberry-Vanilla

The cupcakes are dense. They aren’t particularly moist, but they aren’t dry either. They have a sweet initial taste. Then the strawberry kicks in. It’s almost an aftertaste. And it tastes a lot like a strawberry candy.

The frosting is soft and smooth. It’s a really pretty shade of pink, with little red flecks. It has a very sweet flavor, with a strong hint of strawberry.

Together, I still get sugar first, and strawberry second. The firm cupcake stands nicely with the very soft frosting. But they don’t bring out the strawberry in each other, which is what I was hoping for. Perhaps a little filling or something would make this a stronger strawberry-flavored cupcake.

  • 1 cup whole strawberries
  • 1 1/2 cups all-purpose flour, sifted
  • 1 tsp baking powder

  • 1/4 cup milk, room temperature

  • 1 stick (1/2 cup) unsalted butter, room temperature

Day 328 – Ice Cream Cupcakes

Well.  It’s officially summer.  No denying it.  Now, not every day has been roasty toasty, but we’ve definitely had a couple (I’m sure you have too).  So why not cool down a bit with these Ice Cream Cupcakes (recipe below from Bubbly Nature Creations)?

Pink-Cupcake     Mini-Pink-Cupcake

The cupcakes are very dense and really chewy. They have a plain but sweet taste. No distinct flavor, just sweet.

Whipped-Topping

The frosting is soft but stable. It is pretty much whipped cream. In taste and feel. It’ll last a little longer than regular whipped cream (thanks to the added gelatin). But it doesn’t change the flavor. Sweet, vanilla cream.

The ice cream plus the freezing makes the cupcake quite tough. But, the ice cream and whipped cream really lighten it up. The strawberry ice cream seems to come out as the strongest flavor overall. And the sprinkles (both in the ice cream and on top of the cupcake) add a nice texture balance. This is a sweet, sticky, fun cupcake. Very bright and colorful. Good for a party. And you can vary the ice cream flavors, depending on your preference!

Day 315 – Strawberries and Cream Cupcakes

Sometimes I just see a cupcake that makes me smile.  Just a happy, sweet morsel waiting to be made.  When I saw these Strawberries and Cream Cupcakes (recipe below from Hostess with the Mostess), I’m not gonna lie, they made me smile.  You’ll see why!

Vanilla-Cupcake     Mini-Vanilla-Cupcake

The cupcakes are light and airy and very crumbly. They have a nice, sweet vanilla flavor. Surprisingly strong vanilla flavor, actually.

Strawberry-filling

The filling is syrupy and chewy. It has a sweet strawberry taste with a hint of vanilla. It almost tastes like a melted fruit rollup…if that’s a thing…

Vanilla-Frosting

The buttercream is very sugary, but very light at the same time. It’s fluffy and creamy. Just a hint of vanilla.

This cupcake is not a heavy as I was expecting. The cupcake is very light. The filling is lighter than I thought it would be. It’s adds some tartness to the overall flavor. The strawberry doesn’t overpower the creamy, vanilla flavor. The frosting is probably the most aggressive flavor. Mostly because it’s just a solid sugar flavor. It’s an overall sweet, slightly tart cupcake.

Vanilla Cupcakes:

  • 2 sticks unsalted butter, softened
  • 2 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 6 egg yolks
  • 3 cups cake flour
  • 3/4 teaspoon salt
  • 1 tablespoon + 1/2 teaspoon baking powder
  • 1 1/2 cups milk

Strawberry-Vanilla Filling:

  • 2 pounds ripe strawberries (halved and quartered)
  • 1 vanilla bean, seeds removed
  • 1/2 cup sugar

Vanilla Buttercream:

  • 2 sticks unsalted butter, softened
  • 1 tablespoon vanilla extract
  • 3 1/2 cups confectioner’s sugar
  • 3 tablespoon milk

Day 299 – Ben & Jerry’s Strawberry Cheesecake Cupcakes

Today is Memorial Day (here in the US).  Memorial Day is a federal holiday in the US for remembering the men and women who died while serving in the country’s armed forces.  Below are a few pictures we got the last time we were in Washington, DC (with cupcakes, of course), that I thought reflected Memorial Day.

For today’s cupcakes, I chose something somewhat “All American”.  Ben & Jerry’s Ice Cream.  It’s a classic, let’s face it.  Ben & Jerry’s Strawberry Cheesecake Cupcakes (recipe below from Passion for Baking).  (The recipe is in Norwegian.  You’ll need to use Google Translate to translate it to English.  I’ve translated the ingredients below, but not the directions.)

Cheesecake-Cupcake     Mini-Cheesecake-Cupcake

The cupcakes are crumbly and quite crunchy. Almost like eating a cookie instead of a cupcake. Even more so in flavor. They taste like a sugar cookie. Sweet and vanilla. I don’t get a lot of the cheesecake or strawberry flavors. But it’s sweet and tasty.

Note: The recipe called for 4.3 ml of ice cream. Which comes out to a little less than a teaspoon. I went ahead and assumed (based on the pictures on the blog) that it wasn’t an accurate number. If it was 4.3 dl that comes out to a little less than 2 cups, which seems more likely. So that’s what I did.

Cheesecake-Frosting

The frosting is thick and smooth. It’s extremely sweet and sugary. With just a hint or aftertaste of the white chocolate.

Note: The original blog gave 2 different ways to frost. One was a rose (which I’ve tried before….somewhat successfully). The other was this ruffle look. Mine didn’t come out quite as pretty as the original baker, so please check them out!

The frosting brings a welcome creaminess to the dryness of the cupcake. Together it tastes almost like a sugar cookie with a white chocolate frosting on it. Very similar. Just in cupcake form. Sugary and sweet. Good flavors. Just a little odd in the texture department.

  • 4.3 ml Ben & Jerry’s Strawberry Cheesecake Ice Cream (see tasting notes above)
  • 6.5 dl flour
  • 2 tsp baking powder
  • 3 cups sugar

White Chocolate Frosting: (recipe can be found here)

  • 4 dl powdered sugar
  • 230 g butter
  • 200 g white chocolate
  • 2 tsp vanilla extract

Day 296 – Strawberry Shortcake Cupcakes

Today is my mother-in-law’s birthday!!  Happy Birthday, mom!  I am one of those people who totally lucked out on in-laws when I got married.  Seriously.  They’re the best!  So, I thought these Strawberry Shortcake Cupcakes (recipe below from Cooking Classy) were just about pretty enough to celebrate her birthday!

Vanilla-Cupcake     Mini-Vanilla-Cupcake

The cupcakes are dense and a little sticky. They have a pretty sweet vanilla flavor. Exactly what I’d expect from a Shortcake. Sugary vanilla cake.

Strawberry-Frosting

The frosting is light, smooth and creamy. (Be sure to follow the directions to get this result, otherwise it’ll be a “normal” buttercream.) It has a wonderful (natural) pink color with specks of red. It’s got an extremely buttery flavor. Sweet, but not aggressively so. With a little bite of tartness from the strawberry.

This strawberry shortcake is so light and delicate. The frosting does remind me a little of just whipped cream once it’s on the cupcake. So the flavors from a typical strawberry shortcake are all present and accounted for. It’s smooth and creamy and sweet.

  • 1/4 cup butter, melted and cooled slightly
  • 1/4 cup vegetable oil
  • 1/2 cup whole milk, at room temperature

Strawberry Buttercream

  • 3/4 cup unsalted butter, at room temperature
  • 1 cup (15g) freeze-dried strawberries
  • 2 1/2 Tbsp heavy cream
  • 2 cups (230g) powdered sugar
  • 12 strawberries for decorating

Day 284 – Strawberry Crepe Cupcakes

It’s Mother’s Day.  Happy Mother’s Day to all the moms out there, including the moms-to-be (like me!).  Here’s an oldie, but a goodie, of me and my mom!

But, it also happens to be my sister’s birthday. Now, unfortunately for my adorable niece, Pieper, this is the best photo I have of Lauren and I together.  Sorry, peanut!

Now, there are sooooo many great Mother’s Day cupcake options.  And so many birthday options.  But, when it comes to a day for celebrating not one, but 2, of my favorite people, there was only one logical choice.  Crepes.  The three of us used to make crepes almost every weekend.  Now, we normally took the quick (and obviously healthy) road, and just sprinkled our crepes with brown sugar.  But these Strawberry Crepe Cupcakes (recipe below from Just Putzing Around the Kitchen) seemed to be a better option.  Strawberries.  Crepes.  And Nutella.  Yep.  That’ll do.

The cupcakes are soft and a little oily. The top is a little crunchier than the cupcake below. It has a very sweet taste. Not distinct in any flavor, just sweet. A little like a white cake donut.

Nutella-Frosting

The frosting is thick and smooth. It has a strong Nutella taste, but stable and creamy thanks to the butter and sugar.

The whole cupcake reminds me even more of a donut. The sugary chocolate frosting mixed with the sugary cake, just makes me feel like I’m eating a thickly frosted donut. With a little strawberry in the middle.

Day 280 – Vanilla Cupcakes with Strawberry Frosting

Some days just need a simple, sweet dessert.  A classic pairing.  Ya know, chocolate and vanilla.  Lemon and raspberry.  Or, like these Vanilla Cupcakes with Strawberry Frosting (recipe below from About.com).

The cupcakes are dense, but not thick. A little muffin-like. They have a sweet almond-vanilla flavor. A little like a pound cake meets an angel food cake in taste. (Not in texture.)

Strawberry-Frosting

The frosting is sticky and gooey, but very thin. Not like a buttercream at all. It has a very sweet strawberry flavor.

The strawberry flavor takes a definite front seat in these cupcakes. The creaminess of the frosting is a nice contrast to the cupcake. You get the vanilla cupcake at the end, but the sugar strawberry flavor comes out strong!

Some combinations are just too good to resist.  Raspberry and lemon.  Vanilla and almond.  Chocolate and strawberry.  Hence, these Sinfully Sweet Chocolate Cupcakes with Strawberry Frosting (recipe below from the Stir).  Classic.

Day 271 – Strawberry Shortcake Cupcakes

Some weeks just need a little sweetness to get ya started, right?  This week I chose a classic combo from one of my favorite blogs to get the week started.  Strawberry Shortcake Cupcakes (recipe below from Sally’s Baking Addiction).  And, in case you’re not following me on Instagram, I announced yesterday that my hubby and I are working on a new kind of cupcake…

The cupcakes are dense, chewy and a little sticky. They have a somewhat sweet vanilla flavor. Nothing over-stated. Just light and simple.

The filling is thick and sticky. A little like a strawberry jelly in taste and feel.

The frosting is whipped and fluffy. It has a nice, sweet whipped cream taste with just a hint of the strawberry flavor.

Cupcakes

  • 1 and 2/3 cups (210g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 2 egg whites
  • 1/4 cup (62g) yogurt (Greek or regular yogurt; vanilla or plain)
  • 3/4 cup (180ml) milk
  • 2 teaspoons vanilla extract
  • seeds scraped from 1/2 split vanilla bean (optional)

Strawberry Filling

  • 2 cups diced strawberries (about 10 medium strawberries finely diced)

  • 1 and 1/2 cups (360ml) heavy whipping cream
  • 3 Tablespoons (43g) granulated sugar
