Day 320 – Caramel Macchiato Chocolate Nutella Cupcakes

Caramel Macchiato Chocolate Nutella Cupcakes (recipe below from Life, Love & Sugar).  Yeah.  There’s nothing left for me to say.  Right?

The cupcakes are light and very sticky. They’re a lot like Devil’s Food cupcakes in feel. A little bit in taste. They’re chocolatey with a pretty strong coffee aftertaste. Not bitter, but definitely coffee.


The coffee glaze has an extremely strong coffee flavor with a fair amount of sugar. Kinda like a cortadito (for my Miami friends). My hubby said it reminds him of espresso vodka…I don’t get the same flavor, but that’s ok.


The frosting is very thick, but smooth until it hardens. It has a dark caramel taste with a little sweetness.

This cupcake is ooey and gooey. Lots of different textures and flavors. They all mesh pretty amazingly together. Even the Nutella. It doesn’t make a huge appearance, but it adds a nice hint of nuttiness into the mix. The coffee is strong, the caramel is a nice balance and the chocolate seems very light and delicate.


Note: Make sure to use the sprinkles immediately. The caramel frosting hardens really quickly and the sprinkles don’t stick.

Chocolate Cupcakes:
  • 2 cups cake flour
  • 2 cups sugar
  • 3/4 cup dark cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 1 1/2 tsp vanilla
  • 4 tbsp espresso powder
  • 1 cup boiling water
Caramel Frosting:
  • 1 cup (2 sticks) butter
  • 2 cups light brown sugar
  • 2/3 cup heavy cream
  • 7-8 cups powdered sugar
  • 5-6 tbsp milk or cream
Coffee Glaze:
  • 2 tbsp espresso powder
  • 6 tbsp warm water
  • 2 1/2 cups powdered sugar
  • about 1/4 cup Nutella
  • chocolate sprinkles, for topping

Day 284 – Strawberry Crepe Cupcakes

It’s Mother’s Day.  Happy Mother’s Day to all the moms out there, including the moms-to-be (like me!).  Here’s an oldie, but a goodie, of me and my mom!


But, it also happens to be my sister’s birthday. Now, unfortunately for my adorable niece, Pieper, this is the best photo I have of Lauren and I together.  Sorry, peanut!


Now, there are sooooo many great Mother’s Day cupcake options.  And so many birthday options.  But, when it comes to a day for celebrating not one, but 2, of my favorite people, there was only one logical choice.  Crepes.  The three of us used to make crepes almost every weekend.  Now, we normally took the quick (and obviously healthy) road, and just sprinkled our crepes with brown sugar.  But these Strawberry Crepe Cupcakes (recipe below from Just Putzing Around the Kitchen) seemed to be a better option.  Strawberries.  Crepes.  And Nutella.  Yep.  That’ll do.

The cupcakes are soft and a little oily. The top is a little crunchier than the cupcake below. It has a very sweet taste. Not distinct in any flavor, just sweet. A little like a white cake donut.


The frosting is thick and smooth. It has a strong Nutella taste, but stable and creamy thanks to the butter and sugar.

The whole cupcake reminds me even more of a donut. The sugary chocolate frosting mixed with the sugary cake, just makes me feel like I’m eating a thickly frosted donut. With a little strawberry in the middle.


The flavors totally work together. But that’s what they make me think of. Not a cupcake. A donut.

Strawberry Crepe Cupcakes (recipe from Just Putzing Around the Kitchen)


  • 1 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1 tsp table salt
  • 1 stick butter or margarine, softened
  • 1/2 cup plain Greek yogurt
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 12 whole strawberries, hulled + more for garnishing

Nutella Buttercream Frosting:

  • 3/4 cup Nutella
  • 1 1/2 sticks butter, softened
  • 1 1/2 cups powdered sugar

Day 269 – Salted Cocoa & Nutella Cupcakes

These Salted Cocoa & Nutella Cupcakes (recipe below from Thistlewood Farms) need no introduction.  Or explanation.  I think it’s fair to say that we all know why the needed to be made.  Right?

The cupcakes are extremely crumbly. They just kinda fall about in your hand. They have an extremely dark coffee flavor. Not sweet at all. In fact, almost bitter cause they’re so dark.


The glaze is smooth and liquidy. It hardens nicely if you pop it in the fridge for 10 mins or so and then sprinkle the salt on. (Otherwise the salt just melts right in.) It tastes like liquid Nutella. No joke. Like, Nutella you can drink. Dangerous!

The glaze definitely brings out the best in the cupcake. It lightens it up a fair amount and brings out the Nutella flavor, instead of the coffee flavor. It’s still a pretty dark cupcake overall though.

Salted Cocoa & Nutella Cupcakes (recipe from Thistlewood Farms)


  • 1 1/4 cup all-purpose flour
  • 1/2 cup plus 2 tbsp unsweetened cocoa powder
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 1/2 tbsp. granulated sugar
  • 1 1/2 tbsp. instant coffee
  • 1/4 cup vegetable oil
  • 1/4 cup Nutella
  • 3/4 cup plus 2 tbsp. unsweetened almond milk

Chocolate Sauce:

  • 1 oz. good, unsweetened dark chocolate, roughly chopped
  • 1/4 cup Nutella
  • 2 tbsp. coconut oil
  • 1 tsp. sea salt (set aside for sprinkling)

Day 224 – Nutella Cupcakes

I got a new mini cupcake pan yesterday and I am soooo excited to try it out!!!  What better way to test it than with these Nutella Cupcakes (recipe below from Gimme Some Oven).  Chocolatey hazelnut goodness.  Definitely the was to break in this pan!

The cupcakes are moist and chewy.  They have a light crunch on the top.  And a nice chocolate flavor.  Not milk or dark, just simply chocolatey.


The frosting is thick and hard.  Easy to pipe, just very thick.  It have a strong Nutella flavor.  Like sugary Nutella.

Together the Nutella is definitely the star.  No doubt that’s what this is.  The frosting and the  Nutella filling blend together and are much stronger than the cupcake.  It’s a shame cause the cupcake is so good, but not a shame cause it’s Nutella.

Nutella Cupcakes (recipe from Gimme Some Oven)

  • 1/2 cup (1 stick) butter, softened
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup dark chocolate cocoa powder (or any unsweetened cocoa powder)
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup buttermilk
  • 1/2 cup coffee, lukewarm
  • coarse sea salt, for sprinkling
  • 1 (13-ounce) jar Nutella, to fill the cupcakes (you may or may not use the whole jar)
Nutella Frosting:
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup Nutella
  • 2 tsp. vanilla extract
  • 4 cups powdered sugar
  • pinch of kosher salt
  • 2-3 Tbsp. milk (or heavy cream)

Day 215 – Nuts About Chocolate Cupcakes

Ok, these Nuts About Chocolate Cupcakes (recipe below from Lick The Bowl Good) might be slightly cheating on my “homemade” commitment.  Not that it’s out-of-a-box, but there’s no actual frosting.  That’s right.  It’s just Nutella….and more Nutella.  I didn’t figure you’d mind.  (I know I don’t!)

The cupcakes are extremely dense and chewy.  They’re moist though, not dry at all.  It kinda feels and tastes like eating a Hershey’s chocolate syrup mousse.  Strong chocolate flavor.  That distinct Hershey’s syrup flavor.


The frosting is….well…it’s Nutella.  Chocolate. Hazelnut. Enough said.

Together they taste like a cake version of the Ferrero Rocher.  It’s amazing! This is a perfect, quick but classy dessert!  It looks beautiful and elegant, and is so simple to make.

Day 213 – Honey Banana Cupcakes

Ok, this is one of those days where I need a cupcake that just makes me happy.  You know.  The kind that just warm your heart (and your stomach).  So, why not try these Honey Banana Cupcakes (recipe below from Neighbor Food Blog)?  You got your honey.  Your banana.  And you top it with a Nutella ganache?  What?!?!

The cupcakes look like banana muffins.  Dense, fairly moist and sticky.  The banana flavor is definitely the star, but the honey makes them much sweeter than a typical muffin.  You can definitely tell it’s a cupcake.


The glaze is smooth and thicker than a ganache, but still very runny and easy to spoon onto the cupcakes.  It has a sweet, chocolate taste with just a hint of Nutella nuttiness. Really tasty. It’s be good with some graham crackers or Nilla wafers too!

The chocolate and the cupcake to really well together.  It’s sweet, it’s chocolatey, with that little touch of banana and hazelnut.  This would be another great brunch (or morning) cupcake.  Almost, almost a frosted muffin, but better.

Day 208 – Nutella Cupcakes with Strawberry Cream Cheese Frosting

These Nutella Cupcakes with Strawberry Cream Cheese Frosting (recipe below from The Baking Robot) are for anyone who needs that little extra kick to get their Monday started.  I know.  Trust me.  Mondays can be rough.  Hopefully today’s Musical Monday selection, “The Stone” by Bryan Morris, as well as these cupcakes, get you started off right!

These cupcakes are dense and almost on the dry side, but not dry. The tops have a serious crunch to them too. They are super chocolatey and remind me a lot of the cookie part of an Oreo. I don’t really get the Nutella flavor, but I like the flavor I did get!


The frosting is thick and creamy. Very easy to pipe, and a pretty off-pink color. It is a definite cream cheese frosting, with a light strawberry flavor.

It’s like a strawberry dipped in cream cheese covered in chocolate. Exactly like that. Sweet. Chocolatey. Strawberry-y….If you like these flavors, you’ll love this cupcake!

  • 8 oz (1 package) cream cheese, softened
  • 3 cups powdered sugar

Day 34 – Chocolate Cupcakes with Creamy Nutella Frosting

First, I need to say a huge thank you to my friend, Lana. She got me an amazing new cookbook, Miette – recipes from San Francisco’s Pastry Shop – by Meg Ray with Leslie Jonath. It looks fantastic and I can’t wait to dig in to it!!

On a (only slightly) different note, I love that Chocolate-y Hazelnut Nutella goodness.  Don’t you?  So, I decided to try these Chocolate Cupcakes with Creamy Nutella Frosting (recipe below from Sally’s Baking Addiction).

Chocolate Cupcake     Mini Chocolate Cupcake

These cakes are dense with the texture of a Devil’s food cake.  They have a milk chocolate flavor, very light and even.

Nutella Frosting

This frosting is thick and very easy to pipe.  It tastes like a whipped version of Nutella.  Not like eating Nutella from the jar (not that I’d judge…).  It’s lighter than that.

Nice combination, but I did prefer the parts separately.  It isn’t that they don’t work, but together they are far richer than either part is by itself.

    • 1 cup water
    • 1/2 cup unsweetened cocoa powder
    • 1 and 1/3 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened to room temperature
    • 1 cup sugar
    • 2 large eggs
    • 2 teaspoons pure vanilla extract
Creamy Nutella Frosting
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 2 cups powdered sugar
  • 3/4 cup Nutella
  • 3-4 Tablespoons heavy cream*
  • 2 teaspoons vanilla extract
  • salt to taste
  • decorative candies (optional)
