Day 325 – Vanilla Bean Cupcakes

Some days you just need a good, old-fashioned cupcake.  A classic, ya know?  I normally default to chocolate, but I do love using vanilla bean whenever possible.  Vanilla Bean Cupcakes (recipe below from my baking addiction).

The cupcakes are relatively dense and slightly moist. They feel, taste and even smell like a vanilla cake donut. Odd, in cupcake form, but definitely not a bad thing. Sweet and cakey.


The frosting is soft and smooth, with really pretty flecks of vanilla bean. It has a very sweet vanilla flavor. A lot like vanilla bean ice cream, actually.

Yup. Frosted vanilla donut with sprinkles. That’s it. Very sugary. Good, strong vanilla flavor. A sweet treat. Great for kids and adults!

Vanilla Bean Cupcakes (recipe from my baking addiction)

Vanilla Bean Cupcakes:

  • 2 1/4 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 1/4 cups whole milk, room temperature
  • 4 large egg whites, room temperature
  • 1 stick (8 tablespoons) unsalted butter, at room temperature
  • 1 1/2 cups sugar
  • seeds scraped from one vanilla bean
  • 2 teaspoons pure vanilla extract

Vanilla Bean Buttercream:

  • 3 sticks unsalted butter, softened
  • seeds scraped from one vanilla bean
  • 2 teaspoons clear vanilla extract (this helps maintain the bright white color)
  • 1 ½ pounds (24 ounces) confectioners’ sugar, sifted
  • 4-6 tablespoons heavy cream or milk

Day 101 – Glazed Doughnut (Krispy Kreme) Cupcakes

I typically prefer my doughnuts with frosting and sprinkles…or in twist form (which is generally the same as glazed, but more fun to look at). But when I saw a recipe for cupcakes based on doughnuts, how could I resist? Glazed Doughnut (Krispy Kreme) Cupcakes (recipe below from My Baking Addiction)

The cakes are very dense and springy. They are perhaps slightly on the dry side, but not terribly.  It’s very much like a spice cake – cinnamon and nutmeg are very strong.


The glaze is a typical powdered sugar glaze. It’s very thin and easy to dip, and then hardens quickly because of the butter.  It has a nice, sweet, simple vanilla taste.

It does, in fact, taste like a glazed doughnut. One of the cinnamon/spice cake doughnuts with glaze, to be exact. Nice taste and all kinds of fun for the kid in me.

Notes: I want more of the glaze – let’s face it, there’s never enough glaze – so I would probably do them more like lemon blossoms. Coat the entire cupcake in the glaze once or twice. I think that would give it even more of the “doughnut” feel/taste.

Glazed Doughnut (Krispy Kreme) Cupcakes (recipe from My Baking Addiction)

For the Batter
1/4 cup butter
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 to 1 ¼ teaspoons ground nutmeg, to taste (I used ¾)
1 teaspoon cinnamon
3/4 teaspoon salt
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 cup milk

For the Glaze
3 tablespoons butter; melted
1 cup confectioners’ sugar; sifted
3/4 teaspoon vanilla
2 tablespoons hot water
