Day 358 – Snickers Cupcakes

Peanuts, chocolate and caramel.  Just a magical combination.  And, when they’re all wrapped together in one package…even more magical.  Snickers Cupcakes (recipe below from Life, Love & Sugar).

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are squishy and moist. They feel like they’re gonna be sticky, but they’re really not. They have a nice semisweet chocolate taste. Not too sweet, not too dark.

Peanut-Filling

The filling is very thick, like cooled caramel sauce, and quite greasy to the touch. It has a nice crunch with the peanuts. It definitely tastes like the inside of a Snickers. Caramel, cream and peanuts all in one.

Peanut-Butter-Frosting

The frosting is thick, but easy to pipe. It has a very light peanut butter flavor. More of a simple buttercream with a hint of peanut butter.

Snickers-Cupcake

The glaze was very, very thick. Too thick to drizzle. I added almost double the milk to make it the right consistency. It tastes like room temperature hot chocolate. It’s sweet, but not too sweet. Mostly you get the cocoa flavor.

Mini-Snickers-Cupcake

This cupcake offers a whole lot of texture! The cupcake is light and mildly chewy, the filling is crunchy and gooey, the frosting is smooth. It’s a lot. It definitely reminds me of a Snickers in flavor. The frosting kind of gets lost though. I want a little bolder flavor, perhaps more peanut butter in place of the shortening, because the filling almost becomes the star.

Snickers Cupcakes (recipe from Life, Love & Sugar)

Chocolate Cupcakes:
1 cup flour
1 cups sugar
1/4 + 1/8 cup dark cocoa powder
1 tsp baking soda
1/2 tsp salt
1 large egg
1/2 cup buttermilk
1/2 cup vegetable oil
3/4 tsp vanilla
1/2 cup boiling water
Filling:
3 tbsp milk
6 tbsp butter
8 oz caramels, wrappers removed
1/2 cup chopped peanuts
1/4 cup marshmallow fluff
Peanut Butter Icing:
1/2 cup butter
1/2 cup shortening
4 cups powdered sugar
1 tsp vanilla extract
2/3 cup peanut butter
2-3 tbsp water or milk
Chocolate Glaze and topping:
1/2 + 1/8 cup powdered sugar
1 tbsp cocoa
1 1/2 tbsp milk
6 mini snickers, cut in half, for topping

Day 331 – Cinnamon Sugar Swirl Cupcakes

So, I know that sometimes cinnamon is considered a bit of a fall flavor.  But I love it.  All the time.  Seriously.  Pepperidge Farms Cinnamon Swirl bread is pretty much a daily occurrence for me.  So, I couldn’t resist these Cinnamon Sugar Swirl Cupcakes (recipe below from Life, Love & Sugar).

The cupcakes are crumbly and maybe a little dry, but the crunch of the cinnamon-sugar takes away from that. It has a nice cinnamon-sugar taste. Not too sweet, not too dull.

Cinnamon-Sugar-Frosting

The frosting is very, very thick. The frosting is sweet, but not too sugary. The shortening cuts a lot of the sweetness. It’s like a sugary, cinnamon center of an Oreo.

This cupcakes ends up being more like a frosted muffin when it’s all together. It’s still a little on the dry side, and the frosting doesn’t add much moisture. It’s sweet, but not too sweet. It has a very strong cinnamon flavor.

Cinnamon Sugar Swirl Cupcakes (recipe from Life, Love & Sugar)

Cupcakes:
  • 1 2/3 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup butter, room temperature
  • 3 egg whites
  • 2 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 and 1/2 tbsp ground cinnamon
  • 1/4 cup sugar
Cinnamon Sugar Frosting:
  • 1/2 cup butter
  • 1/2 cup shortening
  • 4 cups powdered sugar
  • 2 1/2 tsp cinnamon
  • 3/4 tsp vanilla extract
  • 1-2 tbsp water or milk

Day 320 – Caramel Macchiato Chocolate Nutella Cupcakes

Caramel Macchiato Chocolate Nutella Cupcakes (recipe below from Life, Love & Sugar).  Yeah.  There’s nothing left for me to say.  Right?

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are light and very sticky. They’re a lot like Devil’s Food cupcakes in feel. A little bit in taste. They’re chocolatey with a pretty strong coffee aftertaste. Not bitter, but definitely coffee.

Coffee-Glaze

The coffee glaze has an extremely strong coffee flavor with a fair amount of sugar. Kinda like a cortadito (for my Miami friends). My hubby said it reminds him of espresso vodka…I don’t get the same flavor, but that’s ok.

Caramel-Frosting

The frosting is very thick, but smooth until it hardens. It has a dark caramel taste with a little sweetness.

This cupcake is ooey and gooey. Lots of different textures and flavors. They all mesh pretty amazingly together. Even the Nutella. It doesn’t make a huge appearance, but it adds a nice hint of nuttiness into the mix. The coffee is strong, the caramel is a nice balance and the chocolate seems very light and delicate.

Note: Make sure to use the sprinkles immediately. The caramel frosting hardens really quickly and the sprinkles don’t stick.

Caramel Macchiato Chocolate Nutella Cupcakes (recipe from Life, Love & Sugar)

Chocolate Cupcakes:
  • 2 cups cake flour
  • 2 cups sugar
  • 3/4 cup dark cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 1 1/2 tsp vanilla
  • 4 tbsp espresso powder
  • 1 cup boiling water
Caramel Frosting:
  • 1 cup (2 sticks) butter
  • 2 cups light brown sugar
  • 2/3 cup heavy cream
  • 7-8 cups powdered sugar
  • 5-6 tbsp milk or cream
Coffee Glaze:
  • 2 tbsp espresso powder
  • 6 tbsp warm water
  • 2 1/2 cups powdered sugar
Additional:
  • about 1/4 cup Nutella
  • chocolate sprinkles, for topping
