Day 295 – Key Lime Cupcakes

My dear friend, Marc, is coming to visit me tomorrow.  Yay!  I’m so excited.  One of my favorite memories with Marc is doing a show in Key West.  We did lots of shows in Florida together (when we both lived there).  But, getting to go to Key West and “work”…it was amazing!  So, to celebrate getting to see him tomorrow, I decided on these Key Lime Cupcakes (recipe below from Unusually Lovely).

Lime-Cupcake     Mini-Lime-Cupcake

The cupcakes are very cakey. Not to moist, not too dry. Not too dense, not too squishy. They have a lightly sweetened flavor with just a hint of line. A very passive cupcake. The graham cracker crust has a nice crunch to it. It’s sweet, but no sweeter than a graham cracker itself.


The frosting is whipped cream. Yum. All around. Easy to make. Always looks pretty. And yum. Sweet vanilla cream.

This cupcake is very light overall. No flavor necessarily overpowers the others. The graham cracker is probably the strongest flavor, though I get a lot of vanilla as well. The crunch is a nice contract to the otherwise ooey-gooey texture between the cake and the whipped cream.


The whipped cream may benefit from a little lime juice as well, to really punch up the flavor. I don’t get a lot of lime taste overall, which is sad in a key lime cupcake.

Key Lime Cupcakes (recipe from Unusually Lovely)


  • 3 cups graham crackers, crushed
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 11 tbsp unsalted butter, melted


  • 14 tbsp butter, softened
  • 1 3/4 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 1/4 cup milk
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 1/2 cup flour
  • zest of a lime
  • juice from 2 limes

Whipped Cream Frosting:

  • 4 tbsp sugar
  • 2 cups heavy whipping cream
  • 2 tsp vanilla

Day 73 – Chocolate S’mores Cupcakes

So, today, I wish a very happy birthday to Anna.  She has been like a sister to me almost my entire life!  I’m so thankful that she moved to NYC so that I feel like I have family nearby!!

It also happens to be that chocolate, in pretty much any form, is one of Anna’s all-time favorite things.  So, I couldn’t pick a more perfect birthday cupcake for her than these Chocolate S’mores Cupcakes (recipe below from Authentic Suburban Gourmet).

The cakes have a devil’s food cake texture – light, airy and moist.  They have a nice even, sweet chocolate flavor to cake. Not too strong. Not dark at all.


The frosting doesn’t seem as thick as regular egg white/7-minute frosting, but it maintains it’s piping just fine, especially if you toast the tops. Very gooey.  It has a great vanilla-marshmallow flavor. Much stronger flavor than using marshmallow fluff, which so many recipes call for.

This is not a complex cupcake. This is a good, solid chocolate & marshmallow cupcake. If you love that combo, you’ll love this combo. If you don’t, you probably won’t…and you’re a little nuts…just sayin’. It’s not necessarily life-changing, but it is tasty!

Notes: This is another cupcake that doesn’t really work in mini. I lost about half of the batch just trying to get them out of the well-oiled pan – they’re just too delicate. And, there’s nothing actually S’mores about it until you add the graham cracker garnish, there’s no graham cracker in the actual cupcake of frosting.

  • Appearance: 5 (the garnish is so simple, but so cute)

Chocolate S’mores Cupcakes (recipe from Authentic Suburban Gourmet)

Chocolate Cupcakes

(makes 24-27 standard sized cupcakes)

2 cups sugar
1 3/4 cups all purpose flour
3/4 cup unsweetened cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
3 eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
3/4 cup boiling water

Marshmallow Frosting

2 (large) egg whites
1 cup sugar
6 Tablespoons water
1 Tablespoon light corn syrup
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 cup miniature marshmallows
1 teaspoon vanilla extract

Day 58 – S’more Cupcakes

So many S’mores recipes, so little time…oh, no. Wait!  That not true at all!!  I’ve got all kinds of time!!  Yay!!!!  S’more Cupcakes (recipe below from Remodelaholic)


The cake is wet and sticky.  It’s kinda missing a crunch factor.  It does taste just like a S’more though!  All the flavors are good.  The chocolate comes out nicely against the graham cracker.  I could always use more marshmallows.  Always.


The full-size has a nicer balance of flavors, but the mini is a good bite-sized option.  This is a yummy cupcake.  Not overly pretty to look at and, obviously, no frosting.  But it’s a good dessert in cup form.

Scoring Sheet:

– Cupcake Taste: 4

– Frosting Taste: 3 (I judged the marshmallows alone, which aren’t really a 3, but they aren’t really a frosting either…)

– Overall Taste: 4

– Appearance: 2.5 (They sink a lot in the center where the Hershey is)

– Ease of Making: 4.5

– TOTAL: 18

  • 2 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/3 cup mini chocolate chips
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

  • 24 Hershey Kisses, unwrapped
  • 36 mini marshmallows

Day 46 – S’mores Cupcakes

Yes.  Another S’mores Cupcake (recipe below from Your Cup of Cake).  And, I can guarantee, this won’t be the last.  There are so many S’mores recipes.  And, lucky for us, there are so very many days left…

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cakes have a good density and moistness.  Nice chocolate taste.  Not too dark or rich.   The graham cracker at the bottom is really crumbly when you eat it.  Not a bad thing, just an FYI really.

The filling is between a glaze and a buttercream.  It’s more cream cheese than marshmallow, but it’s not overly sweet either.


This frosting is good and thick, almost like cookie dough.  It’s not overly sweet.  The graham cracker cuts the sugar a lot.  (Note: Make sure you really grind the graham crackers.  I had a few chunks left which made it a little hard to pipe.)

The balance is yummy!!  All 3 parts are super tasty, though not 100% like a S’more.  It’s kinda like an adult S’more – more flavor & less sugary.

Chocolate Cakes:
1 ¾ cup sugar
¼ cup brown sugar
1/2 cup vegetable oil
1 cup sour cream
2 teaspoons vanilla extract
2 eggs
2 cups flour
1 cup cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
¾ cup boiling water
Graham cracker crumbs (fine crumbs)
Marshmallow Cream Centers:
4 oz cream cheese
½ cup marshmallow cream
1 ½-2 cups powdered sugar
Graham Cracker Buttercream:
8 oz cream cheese
½ cup butter, softened
4 cups powdered sugar
¾ cup graham cracker crumbs (fine crumbs)
1 teaspoon vanilla
2-3 tablespoons whipping cream or milk
mini marshmallows and chocolate for decoration

Day 7 – S’mores Cupcakes

I.  Love.  S’mores.  I love all things s’mores!  So, I can’t ever resist a s’mores recipe.  These S’mores Cupcakes (recipe below from Baked Perfection) are no exception.

What I found most interesting in this is that they aren’t a chocolate cupcake, which is normal for S’mores recipes.  They’re a graham cracker cupcake.  Super unique!  These cupcakes are very dense and almost wet, similar to a carrot cake.  The minis have the same density, which is nice.  The tops are slightly crispy.

The chocolate filling is essentially a ganache.  It’s quite yummy, but I would prefer a semi-sweet or possibly adding a little milk chocolate in – the bittersweet was strong.  The frosting is delicious, though I’d add slightly less vanilla next time.

Yum.  There’s a nice crunch to the toasted frosting.  (I used my oven broiler — it would be significantly easier if I used a kitchen torch.)  The minis have a nice bite-sized flavor, but the flavors really shine through in the full-size.

– Frosting Taste: 4

– Overall Taste: 3.5 (would be higher with a lighter chocolate)

– Appearance: 4.5

– Ease of Making: 3 (Filling + egg white frosting)

S’mores Cupcakes (recipe from Baked Perfection)
recipe makes 12 cupcakes

1 1/2 cups graham cracker crumbs (about 15 whole crackers ground in processor)
1/2 cup all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup whole milk
8 ounces bittersweet chocolate (do not exceed 61% cacao), chopped
1/2 cup (scant) heavy whipping cream

Marshmallow Frosting

4 large egg whites
1 cup sugar
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
