Day 14 – Banana Split Cupcakes

A little fun for Hump Day.  Middle of the week in the middle of the month.  Double Hump Day!  Banana Split Cupcakes (recipe below from Foods for the Soul) should lighten up the day.

The cake is ridiculously dense!!   I want a cupcake to be a little more moist.  Not overly sweet.  Very banana muffin-esque, in consistency and in taste.

The filling is creamy and VERY sour!!  There’s not much else to say about it…

Frosting is smooth and creamy.  Nice sweet vanilla flavor.

How cute are those?!  The tart filling kinda surprises you at first, but otherwise the balance is nice.  This is an extremely fun, adorable cupcake.  It’s not bad taste-wise, but not amazing.  Very similar to a light banana split.  This would be a wonderful party cupcake, a definite crowd pleaser.  And, it’s super easy to make, despite being a 3-part cupcake!

RECIPE

Banana Split Cupcakes (recipe from Foods for the Soul)

for the cupcakes
1 1/3 c all-purpose flour
2 tsp baking powder
¼ tsp salt
2 tbsp butter, softened
¾ c granulated sugar
2 egg whites
1 tsp vanilla
1 medium ripe banana, mashed
for the filling
½ c plain nonfat Greek yogurt
2 tsp granulated sugar
1 tbsp unsweetened cocoa powder, sifted
for the frosting
1 tbsp butter, softened
1½ c powdered sugar, sifted
1½ tsp vanilla extract
1 tbsp skim milk
for decorating
12 cherries
2 tbsp rainbow sprinkles
