Day 338 – 4th of July Cupcakes

In June 1776, Thomas Jefferson included the phrase “UNITED STATES OF AMERICA” in all capitalized letters in the headline of his “original Rough draught” of the Declaration of Independence. In the final Fourth of July version of the Declaration, the pertinent section of the title was changed to read, “The unanimous Declaration of the thirteen united States of America”.   No matter how we say it, today, the 4th of July, represents Independence Day in the USA.

To celebrate the holiday I chose these 4th of July Cupcakes (recipe below from Six in the Suburbs Blog).

Red-White-Blue-Cupcake     Mini-Red-White-Blue

The cupcakes are dense and chewy. They’re pretty moist, but not oily or sticky. They are very sweet with a fairly strong vanilla flavor. They taste a little like a very sweet sugar cookie.

Vanilla-Buttercream

The frosting is thick and creamy. It is extremely sweet with a light vanilla flavor. Very sugary.

The cupcakes are sweet with a fairly strong vanilla flavor. These cupcakes are adorable. Simple and pretty. Very classy. Not an over-the-top celebration cupcake. They’d go really well at a barbecue or a holiday party.

RECIPE

4th of July Cupcakes (recipe from Six in the Suburbs Blog)

Vanilla Cupcakes:

  • 2 Sticks of butter (1 cup), unsalted, softened
  • 1 1/2 Cups of sugar
  • 1 Tablespoon of baking powder
  • 1/2 Teaspoon of salt
  • 4 large eggs
  • 1 Cup of milk
  • 2 Teaspoons vanilla extract
  • 2 2/3 Cups of flour
  • Food coloring to dye batter, if desired

Vanilla Frosting:

  • 3 3/4 Cups of confectioners sugar
  • 1/2 Cup of butter or margarine, softened
  • 3-4 Tablespoons of milk
  • 1 Teaspoon of vanilla
