Today marks the beginning of the final month of My Year of Cupcakes. Amazing. So, I knew we needed a fun cupcake to kick off this month. And how fun do these Cotton Candy Cupcakes (recipe below from On Sugar Mountain) look?
The cupcakes are moist and dense. Not sticky, but very chewy. They have really pretty flecks of pink from the cotton candy. They have a very sweet taste. Not terribly vanilla or any other distinct flavor. Just plain and sweet.
The frosting is smooth and creamy. It’s very, very sweet as well! Again, not a strong individual flavor, just sugary.
Together they have a stronger cotton candy taste, which is really just lightly flavored sugar…They are extremely sweet cupcakes. But would probably be a hit for any kids party!

Cotton Candy Cupcakes (recipe from On Sugar Mountain)
Cotton Candy Cupcakes:
- 1 1/2 cups flour
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup butter (1 stick) at room temp
- 1/2 cup sour cream, at room temp
- 1 egg + 2 egg yolks, at room temp
- 1 tsp vanilla
- 1/2 cup cotton candy, firmly packed
Cotton Candy Frosting:
- 1 1/2 to 3 tsp heavy cream
- 1 oz cotton candy
- 1/2 cup (1 stick) butter, softened
- 8 oz powdered sugar
- 1/2 tsp vanilla
