Day 329 – Cherry Coke Cupcakes

I love Cherry Coke.  To be fair, I’m more of a Pepsi person, if you’re talking about plain soda.  But, for whatever reason when the cherry flavor is added, I change to Coke.  So I had to give these Cherry Coke Cupcakes (recipe below from Simply Stacie) a try!

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are moist and chewy. They have a sweet chocolate. Maybe a hint of cherry, but nothing strong until you get to the cherry-filled center. That’s got a really strong cherry flavor.

Note: I wonder what might happen if you chopped up the cherry and put pieces in instead. To spread out the cherry flavor.

Coke-glaze

The glaze is thick and smooth for a glaze. It has a very sweet Coca Cola flavor. Like a candy version of Coke.

Whipped-Cream

Whipped cream. That’s about it. Sweet. Creamy. Simple.

This cupcake is smooth and sweet. The chocolate is still the strongest flavor, other than the cherry center. It’s very sweet. The glaze gives it a stronger Coca Cola flavor, but the sugar and the chocolate still prevail.

  • Frosting Taste: 4 (glaze and whipped cream)
  • Overall Taste: 3.5
  • Appearance: 3.5
  • Ease of Making: 4 (even with 3 parts, very simple)

RECIPE

Cherry Coke Cupcakes (recipe from Simply Stacie)

Cupcakes:

  • 1½ cup flour
  • 3 tbsp cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup sugar
  • 8 tbsp butter, at room temperature
  • 1 large egg
  • ½ cup buttermilk
  • ¾ cup Coca-Cola
  • ¼ tsp maraschino cherry juice
  • 2 tsp vanilla extract
  • Maraschino cherries, stemless

Glaze:

  • 1 cup icing sugar
  • 2 tbsp Coca-Cola

Topping:

  • ⅔ cup heavy cream
  • 3-4 tbsp icing sugar
  • Maraschino cherries
