Day 322 – Smore Cupcakes

It’s been a while since we’ve had some of that chocolate-marshmallow-graham-cracker goodness.  Too long, I say.  So, I knew it was time for these Smore Cupcakes (recipe below from Living Eventfully).

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The actual cake part of this cupcake is very dense and very sticky. Like scrape-it-off-your-teeth sticky. It has a nice, sweet chocolate flavor. A little bit like Devil’s Food cake, but a bit denser.

White-Fluffy-Frosting

The frosting is fluffy and extremely sticky. It has a very strong vanilla flavor. Like a strong vanilla-flavored marshmallow fluff.

Each individual flavor really sticks out in this cupcake. They complement each other, but they don’t mesh into one taste. The graham cracker crust adds a nice crunch that balances the frosting. The milk chocolate layer is a little stronger than the chocolate cake is. But, again, they don’t compete. It’s a big-bite kinda cupcake. Fun and classic.

RECIPE

Smore Cupcakes (recipe from Living Eventfully)

Graham Cracker Crust:

  • 3 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/4 teaspoon kosher salt
  • 11 tbsp. unsalted butter, melted
  • 8 oz. milk chocolate, chopped and melted

Cake:

  • 2 cups plus sugar
  • 1¾ cups all-purpose flour
  • ¾ cup plus 1 tbsp. cocoa powder
  • 1½ tsp. baking powder
  • 1½ tsp. baking soda
  • 1 tsp. salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 tsp. vanilla extract
  • 1 cup boiling water

Frosting:

  • 8 large egg whites, at room temperature
  • 2 cups sugar
  • ½ tsp. cream of tartar
  • 2 tsp. vanilla extract
