Day 320 – Caramel Macchiato Chocolate Nutella Cupcakes

Caramel Macchiato Chocolate Nutella Cupcakes (recipe below from Life, Love & Sugar).  Yeah.  There’s nothing left for me to say.  Right?

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are light and very sticky. They’re a lot like Devil’s Food cupcakes in feel. A little bit in taste. They’re chocolatey with a pretty strong coffee aftertaste. Not bitter, but definitely coffee.

Coffee-Glaze

The coffee glaze has an extremely strong coffee flavor with a fair amount of sugar. Kinda like a cortadito (for my Miami friends). My hubby said it reminds him of espresso vodka…I don’t get the same flavor, but that’s ok.

Caramel-Frosting

The frosting is very thick, but smooth until it hardens. It has a dark caramel taste with a little sweetness.

This cupcake is ooey and gooey. Lots of different textures and flavors. They all mesh pretty amazingly together. Even the Nutella. It doesn’t make a huge appearance, but it adds a nice hint of nuttiness into the mix. The coffee is strong, the caramel is a nice balance and the chocolate seems very light and delicate.

Note: Make sure to use the sprinkles immediately. The caramel frosting hardens really quickly and the sprinkles don’t stick.

RECIPE

Caramel Macchiato Chocolate Nutella Cupcakes (recipe from Life, Love & Sugar)

Chocolate Cupcakes:
  • 2 cups cake flour
  • 2 cups sugar
  • 3/4 cup dark cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 1 1/2 tsp vanilla
  • 4 tbsp espresso powder
  • 1 cup boiling water
Caramel Frosting:
  • 1 cup (2 sticks) butter
  • 2 cups light brown sugar
  • 2/3 cup heavy cream
  • 7-8 cups powdered sugar
  • 5-6 tbsp milk or cream
Coffee Glaze:
  • 2 tbsp espresso powder
  • 6 tbsp warm water
  • 2 1/2 cups powdered sugar
Additional:
  • about 1/4 cup Nutella
  • chocolate sprinkles, for topping
