Day 311 – Root Beer Float Cupcakes

Root Beer Float Cupcakes (recipe below from The Clever Pink Pirate).  I mean.  Does that not sound tasty?  I love root beer.  Even more when it comes with a heap of vanilla ice cream.  In fact, it was my very first pregnancy craving.  Not as weird as pickles and ice cream, but a craving nonetheless.

The cupcakes are extremely dense and a little tough. They have a sweet flavor. Not necessarily root beer flavored. Just very sweet. A little molasses-flavored.

Root-Beer-Frosting

The frosting is smooth and fluffy. It has a strong, sweet root beer flavor. Like a root beer candy.

Together the “root beer float” flavor comes out a lot better. The cupcake becomes almost the vanilla ice cream part, and the frosting is the sweet root beer. The creaminess of the frosting balances the tough cupcake pretty well, but I still want the cupcake to be a little lighter.

RECIPE

Root Beer Float Cupcakes (recipe from The Clever Pink Pirate)

Cupcakes:

  • 1 egg
  • 1/4 cup sour cream
  • 2 egg white
  • 1 cup Granulated Sugar
  • 1/3 cup Root Beer
  • 1/4 teaspoon salt
  • 3.5 cups Flour
  • 2 Individual (snack size) Regular Applesauce
  • 1 teaspoon Vanilla
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda

Frosting:

  • 1 cup butter, room temp
  • 3 cups Confectioners Sugar
  • 1 teaspoon Vanilla
  • 1.5 teaspoons Root Beer Extract
