Day 307 – Cherry Limeade Cupcakes

Summer.  It’s getting closer.  For some it’s already here.  For others, it’s right around the corner.  But, either way, these Cherry Limeade Cupcakes (recipe below from Carosello) are ready for summer.

Cherry-Cupcake     Mini-Cherry-Cupcake

The cupcakes are dense. They’re not dry, but not particularly moist either. They have a really pretty pink color. They have a slightly sweet, light cherry flavor.

Lime-Frosting

The frosting is thick and gooey, a little like marshmallow fluff. But green. I added just a few drops of green food coloring to give it extra color. It has a sweet, very tart lime flavor.

Note: The frosting was a little thin, so I couldn’t pipe it on. I just dolloped it on. Still looks cute though.

Together they are definitely Cherry Limeade. Where separately, the cherry flavor isn’t as strong. But when you put them together, both flavors stick out. The tartness of the frosting complements the sweetness of the cupcake. It’s very refreshing overall.

RECIPE

Cherry Limeade Cupcakes (recipe from Carosello)

Cupcakes:

  • 2 sticks of softened unsalted butter
  • 3 eggs
  • 1 3/4 cups of sugar
  • 3 cups of flour
  • 1 cup of cake flour
  • 1 cup of 2% milk
  • 1/4 teaspoon of almond extract
  • 3 teaspoons of baking powder
  • 1 teaspoon of salt
  • 4 tablespoons of maraschino cherry juice
  • 1 cup of chopped maraschino cherries
  • zest from one lime and a few squeezes of lime juice from the lime

Frosting:

  • 1 block of cream cheese
  • 2-3 cups of powdered sugar
  • 1/2 teaspoon of vanilla
  • 1/4 teaspoon of almond extract
  • Zest from 3 limes and juice from two of them
  • 1 container of cool whip
  • Food coloring (optional)
