Day 280 – Vanilla Cupcakes with Strawberry Frosting

Some days just need a simple, sweet dessert.  A classic pairing.  Ya know, chocolate and vanilla.  Lemon and raspberry.  Or, like these Vanilla Cupcakes with Strawberry Frosting (recipe below from About.com).

Vanilla-Cupcake     Mini-Vanilla-Cupcake

The cupcakes are dense, but not thick. A little muffin-like. They have a sweet almond-vanilla flavor. A little like a pound cake meets an angel food cake in taste. (Not in texture.)

Strawberry-Frosting

The frosting is sticky and gooey, but very thin. Not like a buttercream at all. It has a very sweet strawberry flavor.

The strawberry flavor takes a definite front seat in these cupcakes. The creaminess of the frosting is a nice contrast to the cupcake. You get the vanilla cupcake at the end, but the sugar strawberry flavor comes out strong!

Vanilla Cupcakes with Strawberry Frosting (recipe from About.com)

Vanilla Cupcakes:

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/8 tsp almond extract
  • 1 1/2 cups cake flour
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup buttermilk

Strawberry Frosting:

  • 1/2 cup butter, softened
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1 (16 oz) package powdered sugar
  • 1/2 cup of fresh strawberries, chopped
  • additional strawberries to garnish
