Day 280 – Vanilla Cupcakes with Strawberry Frosting

7 May

Some days just need a simple, sweet dessert.  A classic pairing.  Ya know, chocolate and vanilla.  Lemon and raspberry.  Or, like these Vanilla Cupcakes with Strawberry Frosting (recipe below from

Vanilla-Cupcake     Mini-Vanilla-Cupcake

The cupcakes are dense, but not thick. A little muffin-like. They have a sweet almond-vanilla flavor. A little like a pound cake meets an angel food cake in taste. (Not in texture.)

The frosting is sticky and gooey, but very thin. Not like a buttercream at all. It has a very sweet strawberry flavor.

The strawberry flavor takes a definite front seat in these cupcakes. The creaminess of the frosting is a nice contrast to the cupcake. You get the vanilla cupcake at the end, but the sugar strawberry flavor comes out strong!
