Day 278 – Churro Cupcakes

Cinco de Mayo.  The 5th of May.  A good reason to eat some tasty food and follow it with some tasty treats.  Treats like these Churro Cupcakes (recipe below from Lady Behind the Curtain).

Cinnamon-Cupcake     Mini-Cinnamon-Cupcake

The cupcakes are dense, but not dry. They have a nice, strong cinnamon flavor with just a little sweetness.


The frosting is smooth and thick. It has pretty specks of cinnamon sprinkled in. The flavor is strong on the cream cheese, with just a little bit of cinnamon.

The textures in this cupcake are really fun. The cake is thick and dense, the frosting is smooth and creamy, but then there’s this added crunch from the cinnamon-sugar topping that really pulls it together. This cupcake is sweet and cinnamony.

Churro Cupcakes (recipe from Lady Behind the Curtain)

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 3/4 cups sugar, plus 2 tablespoons for dusting
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/4 cups milk
Cinnamon Sugar Crunchy Topping:
  • 4 tablespoons butter, melted
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
Cinnamon Cream Cheese Frosting:
  • 1/2 cup (1 stick) butter, softened
  • 8 ounces (1 brick) cream cheese, softened
  • 1/2 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 5 cups confectioners’ sugar
  • 1 tablespoon milk (if desired)
