Day 277 – Tres Leches Cupcakes

A couple of weeks ago I celebrated one of my closest friends birthdays.  We, as you might expect, had several kinds of dessert over the 2-day-Alex-celebration.  One of the desserts was a Tres Leches cake.  I haven’t had one since we lived in Miami.  And I felt inspired!  So, I had to see if these Tres Leches Cupcakes (recipe below from A Few Short Cuts) were half as good!

The cupcakes are extremely dense (almost tough) and chewy. They have a strong, sweet vanilla flavor. A lot like condensed milk, actually.

Soaked-Cupcake

The topping layer is thin and milky. (It can get a little messy, so pour it while the cupcakes are in a bowl or on a plate of some kind.) It has a sweet, vanilla flavor as well, but lighter than the cupcake.

Whipped-Cream-Frosting

The frosting is light and fluffy. It’s really just a whipped cream that’s been sweetened with condensed milk. So, it has a sweet vanilla flavor too. But it’s not too sweet.

This cupcake ends up being very smooth and cohesive. The cupcake itself is still a little on the chewy side for me, but it definitely holds up to the creaminess of the topping and the whipped cream. Together it’s a sweet, vanilla, milky dessert. Just like Tres Leches. My only wish for it is that the cake were slightly more delicate, so that it fell apart a little with all the other toppings.

RECIPE

Tres Leches Cupcakes (recipe from A Few Short Cuts)

Cupcakes:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 6 large eggs, at room temperature, separated
  • 1 1/3 cups granulated sugar
  • 1/2 cup milk
  • 1 tbsp vanilla extract

Tres Leches Sauce:

  • 1 can (14 oz) sweetened condensed milk (save 2 tbsp for whipped cream)
  • 2/3 cup evaporated milk
  • 1 cup coconut milk

Whipped Cream Topping:

  • 1 cup heavy whipping cream
  • 1/2 tsp pure vanilla extract
  • 2 tbsp sweetened condensed milk
  • unsweetened flaked coconut, toasted (optional)
Cupcake
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon fine salt
  • 6 large eggs, at room temperature, separated
  • 1⅓ cups granulated sugar
  • ½ cup milk (whole or 2%)
  • 1 tablespoon vanilla extract
Tres Leches Sauce
  • 1 can (14 ounces) Sweetened Condensed Milk (save 2 tbsp for whipped cream)
  • ⅔ cup Evaporated Milk
  • 1 cup coconut milk
Whipped Cream Topping
  • 1 cup heavy whipping cream
  • ½ teaspoon pure vanilla extract
  • 2 TBSP Sweetened Condensed Milk
  • Unsweetened flaked coconut, toasted (optional)
