Day 276 – Mint Julep Cupcakes

It’s Kentucky Derby day.  Now, as some of you know, I’m off the alcohol for a bit.  Baby-mandated, ya know.  And, any self-respecting Mint Julep contains bourbon.  Right?  So, these Mint Julep Cupcakes (recipe below from Baked Perfection) were tasted and judged by my “guest blogger” (aka my hubby, Ken).

The cupcakes are dense. Not terrible, but too pound-cakey for me. I want this style of cupcake to be light and airy. We used Jim Beam. I think that JB is not the right bourbon, perhaps Four Roses or Widow Jane. If you have the bank, Hudson Baby Bourbon will make this killer.


Again, a different bourbon will make this gorgeous. The frosting is balanced. I can taste the JB and I like the blending of the mint. It is light and delightful. If you like creamy wedding mints, you will LOVE this frosting.

When you take a bite, the cupcake has substance from the cake and lightness from frosting and overall is satisfying. Maybe even quite good. This is a good cupcake that is a deliciously balanced mint cupcake. A little too dense on the cupcake, but fine altogether. Cocktail cupcakes always fall short of the cocktails. I’m not interested in getting a buzz, but I feel like it’s a stretch to channel the cocktail. So it’s a mint julep, because I call it that, but if I were to have a mint julep cocktail alongside, I would have a hard time seeing definitive similarities. I would like to see cocktail cupcakes soaked in the spirit, allowing for the bite of the original spirit to penetrate the flavors of the cupcake.

Mint Julep Cupcakes (recipe from Baked Perfection)


  • 1 cup butter, softened
  • 2 cups sugar
  • 3 eggs
  • 6 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 1/4 + 1/8 teaspoon mint extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups sour cream


  • 2 sticks of butter, softened
  • 6 cups powdered sugar
  • pinch of salt
  • 1/4 teaspoon mint extract
  • 4 tablespoons bourbon
  • 2 – 4 tablespoons milk
  • green food coloring
