The Best Moist and Fluffy White Cupcakes (recipe below from The Alchemist).  I mean.  That’s quite the claim.  But, as we all know.  There’s only one way to find out if it’s true.  Let’s try ’em!

The cupcakes are relatively dense, chewy and a little oily, but not greasy. They have a sweet almond flavor, similar to angel food cake.

Fluffy-White-Frosting

The frosting is thick and creamy. It’s got an almost gelatin-like quality because of the way it’s made. It gives it a very unique texture cause the sugar is so evenly mixed in. It has a sweet vanilla flavor. Very simple.

Together the almond flavor is the star. It has a sweet, creamy, smooth almond taste. The frosting and the cupcake meld so smoothly into one another, in texture and in flavor.

RECIPE

The Best Moist and Fluffy White Cupcakes (recipe from The Alchemist)

Cupcakes:

  • 1 1/4 cups (296 ml.) vegetable oil
  • 1 3/4 cups (373 g.) white granulated sugar
  • 4 eggs
  • 1 Tablespoon pure vanilla extract
  • 1 1/2 tsp. pure almond extract
  • 2 1/4 cups (340 g.) all-purpose flour
  • 1/2 cup (68 g.) cornstarch
  • 1 Tablespoon baking powder
  • 1 tsp. salt
  • 1 1/2 cups (366 g.) full fat sour cream OR full fat yogurt or full fat Greek yogurt

Frosting:

  • 1 1/2 cups (322 g.) white granulated sugar
  • 3/4 cups (113 g.) all-purpose flour
  • 1/4 tsp. salt
  • 2 1/4 cups (532 ml.) whole milk
  • 1 1/2 cups (3 sticks) (339 g.) unsalted butter at room temperature
