Day 254 – Triple Threat Ganache-filled Chocolate Cupcakes

Ok.  I am soo soo sorry for this delayed post!  I had jury duty today (I know…yay!).  But, never fear!  I will not miss a day!!  And, I’m making it a really good one for ya!  Triple Threat Ganache-filled Chocolate Cupcakes (recipe below from The Holiday Kitchen).

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are squishy and extremely moist. They have an almost-devil’s food flavor, but a stronger chocolate taste, thanks to the ganache. Most of the ganache seems to be at the bottom of the cupcake, but it works because they are so squishy. It doesn’t feel like too much for one mouthful.

Note: The ganache in the mini cupcake just kind of blended in and made the center slightly gooey. I like it!

Chocolate-Frosting

The frosting seems a little runny when you pipe it, but it thickens (just like ganache) fairly quickly. It has a dark chocolate taste (I used ½ bittersweet and ½ semisweet chocolate). Not very sweet, but very very chocolatey.

Wow. Chocolate, chocolate and more chocolate. This cupcake reminds me of a chocolate brownie that’s frosted with that dark chocolate ganache. You know. The ones you buy at “fancy” bakeries. Their really dark and sinful. That’s these cupcakes. There are 3 very distinct chocolate flavors, but they mesh beautifully (and richly) together.

RECIPE

Triple Threat Ganache-filled Chocolate Cupcakes (recipe from The Holiday Kitchen)

Cupcakes:

  • 1 3/4 cups flour
  • 2 cups sugar
  • 3/4 cups dark cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup buttermilk, shaken
  • 1/2 cup vegetable oil
  • 2 extra-large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup freshly brewed hot coffee

Ganache:

  • 4 oz. bittersweet chocolate, finely chopped
  • 1/2 cup heavy cream
  • 2 tablespoons confectioner’s sugar

Frosting:

  • 1 cup heavy cream
  • 2 tablespoons corn syrup
  • pinch salt
  • 1 teaspoon vanilla
  • 20 oz. bittersweet and semisweet chocolate (a combination of the two)
  • 1 1/4 cups powdered sugar
  • 1 cup butter, cut into one-tablespoon pieces
