The weather in NYC is beautiful today. Sunny. Breezy. Perfect for spring. So, to go with this gorgeous weather, why not some fruity cupcakes?! Strawberry Cupcakes (recipe below from Joyzz).
They are very dense and spongy. They have a light strawberry flavor with just enough sweetness.
Note: The mini loses a lot of the strawberry flavor and has a weird little aftertaste.
The frosting is grainy. A lot like a typical “grocery store” frosting. My strawberry sugar was homemade (from an online recipe) and is just sugar and freeze-dried strawberries in a food processor. It’s got a very strong butter flavor, without much else.
Note: My frosting didn’t taste at all like strawberry, so I added a little strawberry preserve for color and flavor.
Together the strawberry flavor is a little more obvious. The frosting is still very buttery, but it is less obvious when it’s with the cupcake.

Strawberry Cupcakes (recipe from Joyzz)
Cupcakes:
- 1 1/2 cups pastry flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup fresh strawberries (you need to puree them first)
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 sticks unsalted butter, softened
- 1 cup sugar
- 1 whole egg
- 2 egg whites
Buttercream Frosting:
- 1 1/2 stick butter, softened
- 1 cup strawberry sugar
