Day 251 – Chocolate Cherry Cordial Cupcakes

Chocolate and cherry.  A fairly classic combination, right?  And these Chocolate Cherry Cordial Cupcakes (recipe below from Erica’s Sweet Tooth) look like a great way to put those yummy flavors together.

The cupcakes are moist and sticky, but pull away from the paper nicely. They have a sweet chocolate flavor – almost milk chocolatey.


The frosting is a smooth buttercream with little flecks of cherry. It has a sweet buttercream flavor with a kick of maraschino cherry. Nice, light and sweet.

Note: The recipe didn’t say when to mix in the chopped cherries, so I just folded them in before piping.

The chocolate and the cherry balance really well together. It’s sweet with a little dark and a little tart. A lot like a chocolate-covered cherry. A lot.

Chocolate Cherry Cordial Cupcakes (recipe from Erica’s Sweet Tooth)

Chocolate Cupcakes:

  • 1-3/4 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cups good cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup freshly brewed hot coffee
  • Can of cherry pie filling

Cherry Buttercream:

  • 16 tbsp of butter, at room temperature
  • 4 tbsp juice from a jar of maraschino cherries
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 10 maraschino cherries, chopped + more for topping

Chocolate Ganache:

  • 6 oz semisweet chocolate, chopped
  • 1/2 cup heavy cream
