Day 247 – Vanilla Almond and Anise Cupcakes

Ok.  I’ll be the first to admit that I DO NOT love black licorice.  But, as a goal, I want to try to keep an open mind to foods.  These Vanilla Almond & Anise Cupcakes (recipe below from Sweetapolita) may be a stretch.  But, I have hope.

The cupcakes are dense and sticky. Pretty chewy. They remind me a lot of angel food cake, in both feel and in taste. They have a nice, sweet almond flavor. Very angel food-esque.

Anise-Frosting

The frosting is smooth and soft and extremely easy to pipe. It has a sweet buttercream flavor with the light anise (black licorice) flavor at the end. It’s not very strong. Which, in my opinion, is great. It can be a very overwhelming flavor, but it isn’t at all in this frosting.

The anise flavor actually blends in really nicely to the almond flavor of the cake. I’m kind of surprised (delightfully so) that they mesh so well together. They are definitely not flavors I would have considered putting together. But it’s a nice, light, sweet cupcake with just that hint of black licorice flavoring.

RECIPE

Vanilla Almond & Anise Cupcakes (recipe from Sweetapolita)

For the Cupcakes:
  • 1-3/4 cups (175 g) cake flour
  • 1-1/4 cups (157 g) all-purpose flour
  • 2 cups (400 g) granulated sugar
  • 1 tablespoon (15 ml) baking powder
  • 3/4 teaspoon (5 g) salt
  • 1 cup (2 sticks)(227 g) unsalted butter cut into 1-inch cubes, room temperature
  • 4 large eggs, at room temperature
  • 1 cup (240 ml) whole milk, at room temperature
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1/2 teaspoon (2.5 ml) pure almond extract
For the Frosting:
  • 3 sticks + 2 tablespoons (375 g) unsalted butter, softened and cut into cubes
  • 3 cups (475 g) confectioners’ sugar, sifted
  • 2-1/2 tablespoons (37.5 ml) milk
  • 1-1/2 teaspoons (7.5 ml) pure vanilla extract
  • 3/4 teaspoon (3.75 ml), or to taste, pure anise extract
