Day 245 – Chocolate Sundae Cupcakes

Today is my niece, Pieper’s, 5th birthday.  I cannot believe she is 5!!  So. Crazy.

She is more like me than any child I’ve ever known.  Outgoing.  Loves to sing.  And dance.  And be the center of attention.  Yup.  She’s just like the 5-year old me….and a little like the current (not 5-years-old-any-more) me too.  So, for her very special day, I chose these very special Chocolate Sundae Cupcakes (recipe below from A Healthy Life for Me).  Perfect for a birthday girl!

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are sticky and airy, but extremely dense and chewy. They stick (a lot) to the wrapper, so you may wanna give it a good spray.) They almost taste and feel like a hard chocolate pudding. Not overly sweet or dark chocolate. Just like a simple pudding cup that’s frozen, but not cold. (I know. Weird description…)

Van-Cream-Cheese-Frosting

The frosting is smooth, fluffy and creamy. And extremely easy to pipe. It has a nice, sweet vanilla cream cheese flavor. A lot like the cream cheese icing on a cinnamon roll.

The ganache is soft and liquidy, but it spreads beautifully on the chilled cupcakes.

Together, it’s a fun, sweet cupcake. A really happy cupcake. Not a super WOW. But not a dud by any means. This would be a crowd please cupcake. Adorable. Fun. And simply good.

RECIPE

Chocolate Sundae Cupcakes (recipe from A Healthy Life for Me)

Cupcake:

  • ¾ cup + 2 tablespoons of all-purpose flour
  • 1 cups granulated white sugar
  • ⅓ cup unsweetened cocoa powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup buttermilk
  • ¼ cup unsalted butter, melted
  • 1 tablespoon of vanilla extract
  • 1 cup hot coffee
Vanilla Cream Cheese Frosting:
  • ½ cup unsalted butter, room temperature (8 tablespoons)
  • 8 oz. cream cheese, cold
  • 1 teaspoon vanilla extract
  • 4 cups confectioners sugar , sifted
  • 2 Tablespoons Heavy cream
Chocolate Ganache Ingredients:
  • ⅓ cup of bittersweet chocolate chips, 60% cocoa
  • ⅓ cup Heavy Cream
  • ½ teaspoon corn syrup
Topping Ingredients:
  • Maraschino cherries
  • Tri-colored sprinkles
