Day 238 – Phish Food Cupcakes

Ok.  Can I just say.  Ben & Jerry.  They’re really figured it out!  Some of the most amazing flavors (and flavor combinations) ever.  Like.  Seriously.  EVER!  And their Phish Food Ice Cream is no exception.  Chocolate ice cream.  Marshmallow.  Caramel.  And chocolate fish.  What?!  Crazy….crazy delicious!  Phish Food Cupcakes (recipe below from whitleigh cupcakes).

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are small and dense. A little on the hard side, but I guess that’s ok since you’re topping it with ice cream. They have a cocoa-chocolate taste. Sweet, but not too sweet.

Frosting

The frosting is thick and fluffy. It has a sweet vanilla marshmallow flavor. This would be a great, universal frosting to use with lots of different cupcakes.

This is an over-the-top ooey gooey dessert cupcake. Very sweet. Very sugary. This would be really fun party cupcake, for kids and adults. It’s adorable. But, it melts really quickly, so make sure you freeze it until your ready to eat!

RECIPE

Phish Food Cupcakes (recipe from whitleigh cupcakes)

For the cupcakes:

  • 1 stick unsalted butter, room temperature
  • 1-1/4 cups sugar
  • 2 large eggs, room temperature
  • 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup buttermilk
  • 2 teaspoons vanilla

For the frosting:

  • 1 cup unsalted butter, room temperature
  • 1 teaspoon pure vanilla extract
  • 7 ounce jar of marshmallow creme
  • 2 cups confectioners sugar, sifted
  • 2-4 tablespoons heavy cream
  • 1/2 teaspoon salt

For the caramel:

  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup whipping cream

Extras:

  • 1 Pint Ben & Jerry’s Phish Food Ice Cream
  • 1 Bag Cupcake Goldfish
