Day 237 – Lemon Lover Cupcakes

Today’s cupcake is for the citrus fans.  Like, the die-hard citrus fans.  Or lemon fans.  Not for the anti-fruit-cupcake people.  At all.  But, trust me, if you like lemon, you may wanna take a look at these Lemon Lover Cupcakes (recipe below from The Bake and Brew).

Lemon-Cupcake     Mini-Lemon-Cupcake

The cakes have a texture that’s in between pound cake and angel food cake. Dense, chewy and almost tough, but in that good, cakey way. They have a light lemon flavor. Not overly strong or overly sweet. Just simple.

Note: The minis are a little tougher and don’t have as much lemony goodness to them.


The frosting is thick and creamy. It has a sweet cream cheese frosting taste with a hint of the lemon flavor. Again, not too strong, just simple.

Together the lemon flavor comes out a bit more. Still not overly sweet, which is fine. Just a slightly sweet, lemon cupcake. Very simple.

Lemon Lover Cupcakes (recipe from The Bake and Brew)

Lemon Cupcakes:

  • 2 1/4 cups cake flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cup buttermilk
  • 4 large egg whites
  • 1 1/2 cup granulated sugar
  • zest from one lemon
  • 8 Tablespoons unsalted butter, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • yellow food coloring as needed

Lemon Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 4 Tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon extract
  • zest from one lemon
  • 2 cups powdered sugar
