So, after the fun (and possible crazy shenanigans) of St. Patrick’s Day yesterday, I thought something nice and light would be welcome today. It was that or a hangover cupcake. I felt like nice and light….And these Angel Food Cupcakes (recipe below from It Bakes Me Happy) looked just light enough!
The cupcakes are a little thicker, and slightly chewier than an angel food cake. But they are dense, squishy and sticky just like angel food. And have that sweet vanilla flavor too.
Note: The minis don’t taste as much like angel food cake. They have a sweet vanilla flavor, but not exactly angel food.
The frosting is whipped cream. Plain. Simple. Soft. Fluffy. And yummy.
I mean, these are just happy cupcakes. With the whipped cream they taste exactly like home. My aunt used to make angel food cake all the time when I was growing up. We’d top it with whipped cream, or Cool Whip or whatever. This. Is. It. Tastes exactly like that. Simple. Sweet. Home.

RECIPE
Angel Food Cupcakes (recipe from It Bakes Me Happy)
For the Angel Food:
- 1/2 c + 2 tbsp flour
- 1/2 c powdered sugar
- 1/2 c granulated sugar
- 6 egg whites
- 3/4 tsp cream of tartar
- 1 tsp vanilla
- 1/8 tsp salt
For the Frosting:
- 1 c heavy whipping cream
- 1 1/2 tbsp granulated sugar
- 1 tsp vanilla
