Day 226 – RumChata Cupcakes

So, when I used to live in South Florida, I experienced this AMAZING drink called Horchata.  Check it out.  It’s rum, cream and cinnamon.  Super.  Yummy.  Well, now you can buy it in a bottle.  It’s called RumChata.  And it’s delicious.  So I knew I had to try these RumChata Cupcakes (recipe below from Sweet Designs).

Rumchata-cupcake-plain     Mini-Rumchata

The cupcakes are dense and chewy and just slightly on the oily side. They have a very light, sweet cinnamon flavor. Very much a RumChata (or Horchata) flavor. Sweet, cinnamon, cream and a little hint of rum.

Rumchata-Frosting

The frosting is smooth and creamy. It’s a little on the soft side, but it pipes nicely and then gets that glaze-like crunch on top. It’s a sweet cream cheese frosting flavor with just the slightest hint of the RumChata.

This is a RumChata cupcake. No doubt about it. It’s sweet. It’s cinnamon. It’s creamy. This is a light, easy boozy cupcake. Especially if you like RumChata!

RECIPE

RumChata Cupcakes (recipe from Sweet Designs)

Cupcakes:

  • 1 1/2 cups cake flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 vanilla bean, split lengthwise
  • 8 tbsp. unsalted butter, at room temperature
  • 1 cups sugar
  • 3 large eggs, at room temperature
  • 2/3 cups Rumchata
  • 1 tsp. vanilla extract

Frosting:

  • 8oz cream cheese, at room temperature
  • 1/2 c. butter, softened
  • 1/3 – 1/2 c. Rumchata
  • 4-5 c. powdered sugar
