Day 221 – Strawberry Mimosa Cupcakes

It’s Daylight Savings time!  That wonderful day when we get to lose hour of sleep.  Yuck!  So, to brighten this otherwise “meh” day, I decided on these Strawberry Mimosa Cupcakes (recipe below from Oh My Veggies).  Hope they brighten your day a little!

The cupcakes are dense (the minis are super-dense). But they’re quite squishy. They have a strong orange-champagne flavor. The orange is so strong, it almost tastes like an extract. Amazing what zest can do!


The filling is thick and gooey. It actually reminds me a little of a strawberry fruit roll-up. Interesting.


The frosting is thick and creamy. Very easy to pipe. It has a buttercream flavor that comes through after the initial orange and strawberry flavors. It’s a multi-flavored frosting, which is interesting. It has nice little specks of orange zest and strawberry throughout though. Very pretty.

The filling and the frosting really bring the cupcake up a notch. Overall it’s sweet. It’s tart. The cupcake serves as the “plain-ish” palate to the other parts. Which is great. If it were also sweet or aggressive, it’d be an overwhelming cupcake.

Strawberry Mimosa Cupcakes (recipe from Oh My Veggies)

  • 1/2 c. butter, softened
  • 1 c. granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. sour cream
  • 1/2 c. champagne or ginger ale
  • zest from 1 small orange
Strawberry Filling:
  • 1 c. strawberries
  • 1/4 c. champagne or ginger ale
  • 1/4 c. sugar
  • 4 oz. cream cheese, softened
  • 1 stick butter, softened
  • 1 lb. powdered sugar
  • 1 tbsp. orange zest
  • 2 tbsp. strawberry filling
