Day 217 – Cranberry Orange Cupcakes

The weather has been weird.  Everywhere.  Lots of cold.  LOTS of snow.  Gross.  So, to give myself a little spring-time lift, I decided on these Cranberry Orange Cupcakes (recipe below from My Adventures in the Country).  Sweet.  Tart.  Fruity.  Let’s see if they do the trick.

Orange-cupcake     Mini-Orange-Cupcake

The cupcakes are sticky and fairly dense. They have a very strong orange flavor. They’re sweet, but not overly sweet.

Note: The minis are really quite good!!

Frosting

The frosting is thick and easy to pipe. It has a definite cream cheese flavor with just that slight hint of orange. Not nearly as strong as it in the cupcakes, but it’s there.

This is a bright, fresh, citrusy cupcake. Lots of sparkle and zest to it. Don’t overdo the cranberry drizzle, though, unless you LOVE cranberries, cause it does slightly overwhelm. But this is a tasty combination. The frosting is a lot sweeter than the cupcake, which makes for a good combination. And the orange is the star!

RECIPE

Cranberry Orange Cupcakes (recipe from My Adventures in the Country)

Cranberry Orange Drizzle
2 cups fresh or frozen cranberries
3/4 cups fresh orange juice (about 2 oranges)
1/2 cup sugar

Cranberry Orange Cupcakes
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
3-4 oz. Greek vanilla yogurt, full fat is best
1/3 cup cranberry puree
zest of 2 oranges (juice can be used for drizzle)
1/2 cup butter, unsalted
1 cup sugar
3 eggs

Orange Cream Cheese Frosting
8 oz. cream cheese
1 stick butter, unsalted
2 tbsp fresh orange juice
6-7 cups sifted powdered sugar
