Day 202 – Fruity Pebble Cupcakes

Today is my friend, Erin’s, birthday.  I knew that I had to have a very special cupcake to celebrate Erin.  She is one of the kindest, sweetest, warmest people I know.  Or have every known.  So, when I saw these Fruity Pebble Cupcakes (recipe below from Damn Delicious), I thought, “That’s it!”.  They’re happy.  They’re fun.  And they’re unique!  Perfect!

The cupcakes are thick and dense. Kinda chewy, actually. They taste like big, fluffy sugar cookies. The chewy kind of sugar cookies. Not the hard kind. Sweet, vanilla flavor. Nice and simple. (And they’re so pretty!)

Frosting

The frosting is perfect buttercream consistency. Smooth and thick and easy to pipe. It has a nice, sugary taste. Simple and sweet.

This is a sugary frosting, so typically I’d say, “use scarcely”. But, the cupcakes are so dense, that I say, “pile it on!” It’s happy and pretty and really brightens up the cupcakes! Cause they need a little creaminess and a little sweetness to cut the density. The Fruity Pebbles give it a nice added pop of color, taste and crunch, but you can top these cupcakes with whatever makes you happy!

RECIPE

Fruity Pebble Cupcakes (recipe from Damn Delicious)

Cupcakes:

  • 3 cups cake flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon kosher salt
  • 1 cup milk
  • 4 egg whites
  • 2 teaspoons vanilla extract
  • 3/4 cup unsalted butter, at room temperature
  • 1 cup sugar
  • 1/2 cup rainbow jimmies

Frosting:

  • 1 1/2 cups unsalted butter, at room temperature
  • 3 1/2 cups confectioners’ sugar
  • 2 tablespoons heavy cream
  • 1 tablespoon vanilla extract
  • Fruity Pebbles, for sprinkling
