Day 200 – Coffee Cupcakes

Hopefully, this morning, you are curled up somewhere warm and comfy.  Enjoying a nice cup of coffee/tea/hot chocolate.  Maybe reading a book or watching a movie.  Taking a break from it all…..

But, in case life has not offered you this chance of relaxation this morning, you could always grab one of these Coffee Cupcakes (recipe below from Sweetharts Cakes & Bakes).  It’ll help you get your day going, I promise.

Cupcake      Mini-Cupcake

The cupcakes are dense and very oily. They are almost corn muffin-like, but not completely. They do have a strong coffee flavor. Not a dark, bitter taste, but more like a coffee-flavored candy.


The frosting is smooth and silky. Very easy to pipe and very pretty. It has a nice, sweet coffee flavor. Again, not bitter at all! More like a cafe con leche (for my Miami friends). Simple and yummy!

This is a breakfast cupcake. Like, breakfast for dinner. This is the cupcake after that. Together, it tastes a little like a cornmeal pancake with a coffee syrup. Not bad, not amazing. Very interesting. And pretty fun.

Coffee Cupcakes (recipe from Sweetharts Cakes & Bakes

For the cupcakes:

  • 150g slightly salted butter, softened
  • 150g caster sugar
  • 175g self raising flour
  • 3 eggs
  • 1tsp vanilla extract
  • approx 30ml very strong coffee

For the frosting:

  • 125g unsalted butter, softened
  • 250g icing sugar,sifted
  • Coffee as for the cakes,adding a very small amount at a time until it comes together the right consistency.
