Day 199 – Strawberry Champagne Cupcakes

Yes, yes, yes.  I know.  Valentine’s Day is over.  But does that mean I can’t enjoy strawberries and champagne?  Especially if the strawberries are chocolate-dipped.  I mean.  Can you blame me?  I don’t think so.  So, see what you think about these Strawberry Champagne Cupcakes (recipe below from Annie’s Eats).

The cakes taste and feel like a hybrid between a pound cake and an angel food cake. They are very springy and very, very sticky. With a sweet, light flavor, I wouldn’t have known was champagne unless I’d been told.

Note: My cupcakes were a little shorter than the paper liners, so I took them out before adding the ganache.


The ganache is smooth and soft. Very easy to make. Very easy to use. It has a bittersweet chocolate flavor.

Note: When making ganache, it is always vital to use a good base chocolate, as that it the only flavor it will have.

Together, it’s kinda like a chocolate-frosted sponge cake. Which…I mean…what’s not to like. It’s simple. Sweet, with a good chocolate flavor. The champagne comes through, but just at the very end. And, again, I wouldn’t know that was the flavor, unless I made them.

Strawberry Champagne Cupcakes (recipe from Annie’s Eats)

For the cupcakes:

  • 2 1/4 cups sifted cake flour
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 7 large egg whites
  • 7 large egg yolks
  • 1 1/2 cups superfine sugar (regular is okay), divided
  • 5 tbsp. vegetable oil
  • 1 1/2 tsp. vanilla extract
  • 3/4 cup champagne

For the ganache:

  • 4 oz. bittersweet chocolate, finely chopped
  • 1/2 cup plus 1 tablespoon heavy cream
  • 2 tbsp. unsalted butter, cut into two pieces at room temperature
