Day 196 – Gingerbread Cupcakes

Today is President Abraham Lincoln’s Birthday.  America’s 16th President was born on February 12, 1809.  And his favorite dessert was gingerbread.  So, in honor of President Lincoln, today’s cupcakes are Gingerbread Cupcakes (recipe below from Sweet Girl Confections).

The cupcakes are dense,squishy and extremely moist. Borderline wet. They had a muffin-like texture, that kind of grainy corn muffin feel. They have a nice sweet molasses flavor. A little dark, but not overwhelming.

Note: The recipe calls to mix the water in with the dry ingredients. This made a kind of paste that was a little difficult to work with. They turned out fine, but next time I would mix in half of the dry ingredients, then add water, then add the rest of the dry ingredients.
Frosting

The frosting is thick, especially for a cream cheese frosting. It’s really easy to pipe. I wasn’t sure about the lemon peel in with the cinnamon, but the result is quite tasty. You definitely get both of those flavors, but they work really well together. It’s sweet with a little tart and a little spice.

When you put them together, the lemon flavor is way stronger than I would have thought. It would be a really good cup-of-tea cupcake. You get the sweet lemon first, and then it finishes with a nutty, dark molasses flavor. Coffee would be too bitter and dark, but a good cup of Earl Grey tea would complement very nicely!

(I don’t typically like spice cakes or molasses, but this cupcake is tasty. Undeniably so.)

RECIPE

Gingerbread Cupcakes (recipe from Sweet Girl Confections)

Cupcake Ingredients

½ cup sugar
½ cup butter, softened
½ cup molasses
2 eggs
2 cups all-purpose flour
1 tsp baking soda
½ tsp salt
1½ tsp ground ginger
½ tsp ground cinnamon
½ tsp ground allspice
¾ cup water

Frosting Ingredients

1 package (8 oz) cream cheese, softened
¼ cup butter, softened
2 tsp lemon peel, grated
1 tsp ground cinnamon
1 tsp vanilla extract
4 cups icing sugar
1-2 tsp milk

    Yum! I will absolutely have to try these soon! I loved how you threw in a history fact about Abraham Lincoln loving gingerbread. I am a huge fan of history and baking and it is fun when they go together. Love your blog!
