Day 194 – Strawberry Champagne Cupcakes

In preparation for the impending romantic holiday aka Valentine’s Day, I decided it was time for some romantic cupcakes.  Trust me.  There are lots to choose from.  I actually intend to do quite a few before the month-of-love is over.  But, today, Strawberry Champagne Cupcakes (recipe below from Love & Olive Oil) are on the menu.

Strawberry-Cupcake     Mini-Strawberry-Cupcake

The cupcakes are petite and adorable. They are extremely moist, borderline sticky. They have a distinct flavor. You definitely get the strawberry and the sparkling wine, so make sure to choose the wine carefully. Honestly, the cupcake by itself reminds me of Captain Crunch Berries. Really weird. Not bad, just an unexpected flavor.

Champagne-Frosting

The frosting is light, smooth and fluffy. Extremely easy to pipe. It has a good cream cheese frosting flavor, with a hit of sparkling wine. The flavor is stronger than you think it’ll be so, again, choose your wine carefully!

Together they are sweet with a very distinct, almost tart, flavor from the sparkling wine. They’re light and pretty refreshing. They would make a great brunch or wedding shower cupcake.

Note: The minis and the full-size are extremely similar in flavor. And the minis are super cute!

RECIPE

Strawberry Champagne Cupcakes (recipe from Love & Olive Oil)

Cupcakes:

  • 1 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup coconut milk
  • 1/3 cup champagne/sparkling white wine
  • 1/3 cup strawberry puree
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 1/2 teaspoon vanilla

Frosting:

  • 1 cup champagne
  • 1/2 cup (1 stick) unsalted butter, room temperature, cut into tablespoons
  • 2 1/2 to 3 1/2 cups confectioners’ sugar
  • 2-3 tablespoons milk or cream, as needed
