Chocolate fan here.  I know.  You’re shocked.  You had no idea.  I never talk about my love for all things chocolate.  So, these might surprise you, but today I made Double Chocolate Cupcakes (recipe below from Little Box Brownie).  Compose yourself.  Then read on…

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are sticky and moist. With a good, squishy density and a slight crunch on top. They have a simple chocolate taste. It’s not a dark chocolate flavor at all. Extremely passive.

Chocolate-Frosting

When I added the whipped cream to my smooth chocolate frosting, some of the chocolate seized, leaving me with tiny, soft chunks of chocolate. Now, I don’t mind them. They’re like little surprises. Other than that the frosting is soft and smooth. Very light and whipped. Kinda like Yoplait Whips, if you’ve ever had them. It has a nice strong chocolate taste. I used semisweet, but you can use milk or dark. Whatever you prefer.

Note: Because some of the chocolate in my frosting seized up when I added in the whipped cream, it didn’t pipe the way I had hoped.

Together the chocolate flavors are really good. The frosting is light in texture, where the cake is heavier. But the frosting is heavier on chocolate flavor, where the cake is lighter. Together you get a nice, sweet chocolatey cupcake. A perfect chocolate-lovers dessert.

RECIPE

Double Chocolate Cupcakes (recipe from Little Box Brownie)

Cupcakes

  • 80g butter
  • 1 1/4 cup white sugar
  • 1 3/4 cup plain flour
  • 1 tablespoon baking powder
  • 1/3 cup cocoa powder (has to be dutch processed)
  • 1 cup milk
  • 2 eggs
  • pinch of salt

Frosting

  • 200g milk/dark chocolate
  • 240mls thickened cream
  • 50g cream cheese (room temperature to avoid lumps)
  • 35g white sugar
  • Cadburys Flake chocolate bar to decorate (optional)
