Day 190 – Karamel Sutra Cupcakes

Who doesn’t love Ben & Jerry’s Ice Cream?  I mean, seriously.  Who?  My favorites would have to be Chocolate Chip Cookie Dough and/or Half Baked and/or Mint Chocolate Cookie.  What are your favorite Ben & Jerry’s flavors??

I mean, they’re all kind of amazing.  So, I knew I wanted to give these Karamel Sutra Cupcakes (recipe below from Cookies & Cups) a try.  For sure!

The cupcakes are very squishy. They are light and airy. With a nice, sweet chocolate flavor. Not overstated, but really yummy. Especially considering they are a throw-all-ingredients-in-a-bowl cupcake.


My filling came out very thick. (And took well over twice as long as it was supposed to just to get to a caramel color.) It does have a really nice, smooth caramel flavor though. Not a lot of bite.


The chocolate frosting is surprisingly light and whipped. It tastes like a smooth, buttery semisweet chocolate. My caramel frosting also came out WAY too thick. I tried to pipe it the way she did it in the original recipe, cause it was beautiful, but it was a no-go. Way. Too. Thick. But, it has a yummy caramel flavor. Smooth and even. Sweeter than the filling.

When you put it all together, the filling ends up with a little too much bite for the rest of the cupcake. The frosting and the cupcake are magical together. No doubt about it. Just yummy. I don’t love the filling with it though. It seems too dark, and almost a little bitter. But again. Totally LOVE both frostings and the cupcake together. Yum yum yum!

Karamel Sutra Cupcakes (recipe from Cookies & Cups)

Caramel Filling
  • 1 cup butter
  • 2 cups granulated sugar
  • 2 Tbsp light corn syrup
  • 1 cup whipping cream
Chocolate Frosting
  • 2 cups chocolate chips
  • 2 cups butter
Caramel Frosting
  • 1/2 cup butter
  • 1 cup dark brown sugar
  • 1/4 cup milk
  • 3 cups powdered sugar
  • 1 tsp vanilla
Devils Food Cake Cupcakes
  • 1 cup cake flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup brewed coffee
  • 1/2 cup buttermilk
  • 1 egg
  • 1 tsp vanilla
Chocolate curls (Optional)
  • 1/2 cup semi sweet chocolate chips
  • 1 tsp vegetable shortening
