Day 174 – Spiced Cocoa Cupcakes

With the weather still on the chilly side (really really chilly in some places), I decided I’d like a warm-me-up cupcake again!  These Spiced Cocoa Cupcakes (recipe below from Taste of Home) looked really interesting!!  And, I thought they might do the trick!

The cupcakes are dense and cakey. They are almost crumbly. They taste like molasses cookies. Between the spice, the cocoa and the cranberries. A little like a molasses or gingerbread cupcake.

Glaze

The glaze is thin and smooth. Very easy to drizzle.  It tastes like creamy powdered sugar.

Together, the glaze brings out just a bit of sweetness in the cupcake. I’d like something more from the topping though. Perhaps a whipped cream. Something to break up the weight of the cupcake. Not that it’s bad, I just want more.

  • Ease of Making: 5 (this is about as easy as they come!)

RECIPE

Spiced Cocoa Cupcakes (recipe from Taste of Home)

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/4 cup baking cocoa
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 egg
  • 3/4 cup applesauce
  • 1/4 cup butter, melted
  • 1/2 cup dried cranberries

Icing:

  • 1 cup confectioners’ sugar
  • 4 1/2 tsp milk
