Day 172 – Hummingbird Cupcakes

Hummingbird Cupcakes (recipe below from Exclusively Food).  Now, I’ve never had a Hummingbird Cupcake.  And, I’m not quite sure why they aren’t considered a frosted muffin.   I’d love to know what you think…

Cupcake     Mini-cupcake

The cupcakes are thick and a lot like muffins. The chunks of pineapple and pecans give it a nice, hearty texture.  They have a nice spice to them. Sweet, spicy with just a hint of the fruit. Not overly banana or pineapple though.


The frosting is smooth and very soft. It holds the piping, but not terribly well.  It has a strong cream cheese flavor, with a little sweetness.

Together it’s almost a mixture of a zucchini cupcake and a banana muffin. It’s sweet with a little spice. Good texture and density. The frosting is soft which complements the density and crunch of the cupcake.

Note: The recipe gave 2 different ways to decorate. So I did one for the minis and one for the full-sized.

Hummingbird Cupcakes (recipe from Exclusively Food)


  • 112g (3/4 cup) plain flour
  • 1/4 teaspoon bicarbonate of soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 22g (1/4 cup) desiccated coconut
  • 112g (1/2 cup) caster sugar
  • 32g (1/4 cup) chopped pecan nuts
  • 1 large egg (we use eggs with a minimum weight of 59g)
  • 140g (1/2 cup) mashed, very ripe banana
  • 62ml (1/4 cup) oil (we use a mild-flavoured oil, such as sunflower)
  • 90g (1/3 cup) drained canned crushed pineapple (reserve a teaspoon of the juice for the icing, if desired)

Cream Cheese Icing:

  • 60g cream cheese, softened
  • 10g (2 teaspoons) butter, softened
  • 100g (3/4 cup) icing sugar, sifted
  • 1 teaspoon lemon juice or pineapple juice from crushed pineapple
