Chocolate. Marshmallow. Graham Cracker. It’s an unexplained phenomenon. They’re all amazing alone. But, together. Pure. Magic. I can’t stay away. Can you? S’more Cupcakes (recipe below from Extreme Canadian Coupons).
The cupcakes are dense and chewy. Sticky and moist as well. A little like a milk chocolatey devil’s food cake. They have a very smooth, even and sweet chocolate flavor.
The filling, which you’ll see below, is smooth and creamy. I spooned it in, but you could easily pipe it. It tastes exactly like a Hershey’s milk chocolate bar. Just softer.
The buttercream is smooth and thick, but easy to pipe. It has a very sweet buttercream taste with just a hint of marshmallow.
The double chocolate works nicely together. It really brings out the marshmallow flavor, which is fun! They’re even better if you let them sit for a bit, so the filling isn’t cold when you bite into it. I do wish there was a bit more graham cracker involved within the cupcake, and not just on top, to make it a true “S’mores”, but I can live with how tasty it is all by itself.
Note: The minis are surprisingly accurate. And stable. It’s a good, solid cupcake, so you can fill and frost it and it stays put.

S’more Cupcakes (recipe from Extreme Canadian Coupons)
Cupcakes:
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1/2 cup cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups water
- 2/3 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 teaspoons vinegar
Ganache filling:
- 4 Hershey’s Milk Chocolate candy bars (approximately 6 ounces), chopped
- 1/2 cup heavy whipping cream
- 1/2 tablespoon butter
Frosting:
- 2 cups unsalted butter (do not soften)
- 2 jars (7 ounces) marshmallow cream
- 2 cups powdered sugar
