Dragon’s Loyalty Award

So, this post is lllooooonnnngggg overdue.  (I’m so sorry!!)  I got a nomination for a Dragon’s Loyalty Award from Tasty Treats 13.  Thanks for the nomination.   Check out her website, if you haven’t already.  It’s full of very tasty recipes!!   I am totally addicted!

I have to say, I love this award stuff.  It’s so nice to get and give encouragement in the blogging community.

  1. I was born with a cleft palate.
  2. I am totally addicted to Chinese food.  Addicted.  Must have it at least once a week.
  3.  I love Disney movies.  Still.  Love!
  4.  I sing at home constantly.  While I’m baking, showering, cleaning, whenever.
  5.  My mom is my best friend.
  6.  I got married when I was 19.  (Crazy, I know!)
  7.  My undergrad degree is in flute performance.

Day 164 – Marshmallow Stuffed Chocolate Cupcakes

Alright.  I’ve heard of marshmallow filling, marshmallow frosting and marshmallow fluff all being used in cupcakes.  But, to just stuff a cupcake with a marshmallow?  This could change everything!!  Marshmallow Stuffed Chocolate Cupcakes (recipe below from Today’s Mama).

Chocolate-Cupcake     Mini-Chocolate-Cupcake

The cupcakes are crumbly and cakey. Not dry though.  They have a nice, sweet chocolate flavor. Almost milk chocolate, which is different and nice.

Chocolate-Frosting

The frosting is smooth and creamy.  It has a sugary semi-sweet flavor.

The marshmallow actually brings it all together. It’s smooth and creamy and chocolatey!

Halved-Cupcake

The marshmallow is a little tough to bite, without making a mess. The minis are a nice bite-size attempt though. And much easier to eat.

They’re a little tougher to eat than the average cupcake. You pretty much need a knife and a fork to get all the parts.

Scoring Sheet:

  • Cupcake Taste: 3.5
  • Frosting Taste: 3.5
  • Overall Taste: 3.5

  • Ease of Making: 3.5
  • TOTAL: 18.5

RECIPE

Marshmallow Stuffed Chocolate Cupcakes (recipe from Today’s Mama)

Cupcakes:

  • 1¼ cups flour
  • ½ cup cocoa powder
  • ¾ teaspoon soda
  • ¼ teaspoon salt
  • 1 cup sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla
  • ¾ cup buttermilk
  • ½ cup semisweet chocolate chips
  • 12 large marshmallows

Frosting:

  • 1 cup butter, softened
  • 1 tablespoon plus 1 teaspoon milk
  • 1 teaspoon vanilla
  • 6 ounces semisweet chocolate, melted and cooled
  • 1 ½ cups powdered sugar
