Day 160 – Cocoa Cupcakes

Yesterday: apple.  Today: chocolate.  Oh, chocolate.  I can never stay away too long.  (Which you might know about me by now…)  So, I hope you enjoy these Cocoa Cupcakes (recipe below from life as a moodboard).

The cakes are extremely dense. Borderline dry, but not aggressive.  They are not sweet. Like, not at all. It surprised me. The recipe warns of this, but I still wasn’t expecting it.

Cocoa-Frosting

The frosting looks like it’s going to be really thick, cause it has that dark cocoa-powder look, but it’s surprisingly fluffy and light.  It tastes like dark chocolate ice cream, but not frozen. It has a nice sweet-to-unsweetened balance. Not too sugary, but not too dark.

These blend amazingly well. And I realized that the ‘cocoa’ in the title definitely refers to the strong cocoa powder flavor, not cocoa as in hot cocoa. They’re strong. They’re rich. Not too sweet, but not bitter. A chocolate lovers cupcake.

RECIPE

Cocoa Cupcakes (recipe from life as a moodboard)

Cupcakes:

  • 2 table spoons butter (melted, 30 sec in the microwave)
  • 1/3 cup sugar
  • 1 egg
  • 2 table spoons cocoa powder
  • ½ teaspoon vanilla aroma
  • ½ cup flour + ½ teaspoon baking powder
  • 2 table spoons milk

Frosting:

  • 4 table spoons mascarpone
  • 2 table spoons heavy cream (might work with milk or sour cream)
  • 2 table spoons cocoa powder
  • 2 table spoons confectioners sugar
  • ½ tea spoon vanilla aroma
  • a pinch of salt
