Day 158 – Dark Chocolate Salted Caramel Cupcakes

I have to say.  There have been surprisingly few salted caramel cupcakes so far.  There must be more out there.  It’s a very popular flavor.  Right?  I’ll have to see what else I can find…But, for today, enjoy these Dark Chocolate Salted Caramel Cupcakes (recipe below from Farmer’s Wife Rambles).

The cupcakes are moist and sticky and extremely squishy.  They have a nice chocolate flavor, not overly sweet. In fact, they are almost on the bitter side.

Note: My minis exploded in the pan. So, if you make them, make sure you fill the tin even less than usual.

DC-SC-frosting

The frosting is surprisingly smooth and creamy. (It’s extremely thick before you add in the “liquid” ingredients, but it smooths right out.)  The recipe calls for unsweetened cocoa powder, not dark so the it ends up tasting a lot like chocolate pudding. Not dark. Just sweet and chocolatey.

They are tasty together. But it really just tastes like a chocolate cake with chocolate frosting. Milk chocolate frosting to be more specific. I get a fair amount of the salt flavor, but not really the caramel. Which makes the salt a little odd. It’s not bad, just a salted-chocolate cupcake.

RECIPE

Dark Chocolate Salted Caramel Cupcakes (recipe from Farmer’s Wife Rambles)

Cupcakes:

  • 1 cup all-purpose flour
  • 1/4 cup Unsweetened Cocoa
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup firmly packed light brown sugar
  • 1/2 cup granulated white sugar
  • 1/2 cup whole milk plus
  • 2 tablespoons whole milk
  • 1/3 cup strong brewed coffee or espresso
  • 1/2 cup unsalted butter, melted
Frosting:
  • 1 cup salted butter
  • 3-4 cups confectioners/powdered sugar
  • 1/2 teaspoon table salt
  • 1 tablespoon vanilla extract
  • 1/4 cup caramel sauce (like the ice cream topping)
  • 4 tablespoons heavy cream
  • 3/4 cup unsweetened cocoa powder
