Day 154 – French Toast & Bacon Cupcakes

Happy New Year everyone!!  I hope you all had a wonderful evening, ringing in 2014.  Now, in case your evening was a little too wonderful, I thought these French Toast & Bacon Cupcakes (recipe below from Mama B) might come in handy.  If you catch my drift…

I also decided that the ‘theme’ for January would be New Years Resolutions.  Cause, let’s face it, we all make them.  Some work.  Some don’t.  But that’s okay.

I am starting with (what I’m guessing is the #1 New Years Resolution): working out!

Now, dig in to these cupcakes.  I promised they’ll help you recover from your celebrations.

French-Toast-Cupcake     Mini-FT-Cupcake

The cupcakes are dense, like a muffin, and sticky.  They have a nice sweet and spicy flavor. Very strong on the nutmeg.

Maple-Frosting

The frosting is a thick, smooth buttercream.  It has a sweet, sugary flavor first, then the hit of maple.

FT-Bacon-Cupcake     Mini-FT-Bacon

A bona-fide breakfast cupcake. You get the salt and the bacon first, then the maple, then the spicy cupcake. It’s very tasty. The perfect hangover cupcake or early-in-the-day party cupcake.

Note: I couldn’t find maple extract in my neighborhood (Target has some, I just don’t have a Target nearby). I used about 2-3 tablespoons of maple syrup though, and the flavor came through nice and strong.

RECIPE

French Toast & Bacon Cupcakes (recipe from Mama B)

French Toast Cupcakes

  • ¾ cup butter, softened
  • 1 cup sugar
  • 1½ cups cake flour, sifted
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup milk, at room temperature
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 3 eggs

Maple Buttercream Frosting

  • 2 Sticks butter, softened
  • 2¾ cups powdered sugar
  • 2 teaspoons heavy cream, at room temperature
  • 1 teaspoon maple extract

    What an unusual recipe! Bacon on a cupcake seems almost sacrilege but these look delicious.
