Day 144 – Peppermint Mocha Cupcakes

Well, it’s time for another Starbucks-inspired cupcake.  I couldn’t possibly get through the season without trying these Peppermint Mocha Cupcakes (recipe below from Annie’s Eats).

As a matter of fact, the Peppermint Mocha was the first “coffee” drink I ever had.  I wasn’t a coffee drinker before that.  Then…sold!  Starbucks had hooked another person.  (I had a hard time ever drinking any coffee beverage that wasn’t sweet and sugary after that… I wonder why…)

The cupcakes are crumbly, but not dry. They are nice and springy.  The cupcake alone actually tastes like a peppermint mocha from Starbucks. It’s kind of amazing. I mean. The peppermint is the strongest flavor, but then you get chocolate and coffee. Very cool!

Note: The minis are a little fragile, but they are a really nice bite-sized option. Just make sure you use plenty of spray on the tins.


The frosting is smooth and silky. A swiss buttercream for the most part.  It has a sweet, peppermint flavor. A little less aggressive than the cupcake.

Note: The swirled color frosting is completely optional, but it’s quite easy if you have a couple spare minutes.

The peppermint actually loses some strength when they are put together. Which is surprising but definitely a good thing! I was afraid it might be overwhelming, but it isn’t. It is exactly what the title says. Peppermint Mocha. If you love the drink, you will LOVE this cupcake. If you love peppermint and chocolate, you’ll LOVE this cupcake. The coffee takes a bit of a back seat when they’re all together, but that’s not a problem!

Peppermint Mocha Cupcakes (recipe from Annie’s Eats)


  • 2 2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 2-3 tsp. espresso powder
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup whole milk
  • 1 cup strong brewed coffee
  • 1 tsp. peppermint extract
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs


  • 6 large egg whites
  • 1¾ plus 2 tbsp. granulated sugar
  • 1½ cups (3 sticks) unsalted butter, at room temperature
  • 4 tsp. peppermint extract
  • 1-2 tsp. vanilla extract
