Day 141 – White Chocolate Cupcakes

Okay, so last Tip Thursday, I talked about white chocolate.  And, ironically, this Tip Thursday, I made White Chocolate Cupcakes (recipe below from A Pumpkin & A Princess), but I’m not talking about white chocolate.  Hmmm…..

Anyway!  Check out the Tip video today and then check out these fluffy white cupcakes….that seem to remind me a lot of the snow outside…I guess these were the right choice for today.

Now, dig in to the white chocolate!

White-Cupcake     Mini-White-Cupcake

The cupcakes are dense and very cakey. They aren’t terribly moist, but they’re not too dry either.  They taste a lot like a sugar cookie. Slight crunch on the top and everything. Sweet and simple.

White-Chocolate-Frosting

The frosting is thick and creamy. Very easy to pipe.  The white chocolate is WAY more obvious in the frosting. It tastes like a cream cheese frosting mixed with white chocolate, which is good, since that’s what it is…

White-Chocolate-Cupake     Mini-White-Chocolate

Together these are really nice. A lot like a frosted holiday sugar cookie. The cupcake is sweet but not overstated and the frosting is quite sugary with that white chocolate flavor. They go together quite well.  Note: When they’re frosted, the mini cupcake isn’t strong enough to hold up to the frosting. It still works, but the balance is better in the full-sized.

Note: The directions call for baking powder, but there’s not amount given. I used 1 tsp, which is pretty standard, and that worked perfectly.

RECIPE

White Chocolate Cupcakes (recipe from A Pumpkin & A Princess)

White Chocolate Cupcakes

  • 1 1/2 cup flour
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1 stick (1/2 cup) butter, softened
  • 1 tsp vanilla extracts
  • 3/4 cup whole milk
  • 4 oz white chocolate baking bar

White Chocolate Frosting

  • 4 oz white chocolate bar
  • 8 oz cream cheese, softened
  • 1 stick unsalted butter, softened
  • 1 tsp vanilla extract
  • 4 cup powdered sugar, sifted
