So, today I continue my hunt for a wow-inducing vanilla cupcake. It’s harder to come by than you might think. I mean, vanilla can mean plain. That’s pretty much the standard use of the word, actually. But I have faith that there is a vanilla cupcake out there waiting to surprise me. So I found these. Perfect Vanilla Cupcakes (recipe below from Badpin). Sounds pretty promising, right? Well, there’s only one way to find out…
The cupcakes are dense and very sticky. They had a nice sweet, vanilla flavor. Not overstated. Or understated. They state just the right amount of sugar and vanilla…er…yeah, you get what I’m saying.
A whipped cream-cream cheese frosting is such a unique idea. It has the consistency of a soft, fluffy cream cheese frosting. Not runny, just soft. And the flavor is kind of amazing. It’s a light cream frosting. Not light, as in “diet”. Trust me! Light as in airy and fluffy. Really yummy!
Together these are just a heavenly bite of vanilla cream. The cake brings the frosting down to earth….or the frosting brings the cake up to the heavens…not really sure. But it works. The dense stickiness of the cake counters the fluffiness of the frosting really well. They both have a definite vanilla flavor, but it’s not strong or out of balance. Yum!!
Note: the mini works visually, but the flavor profile loses something. The cupcake isn’t strong enough to combat the frosting, so it’s just like eating the frosting alone…which is fine if that’s what you’re going for…
