Day 108 – Chocolate Coffee Cupcakes

It’s Saturday!!!!  Yes!  The weekend is here.  I don’t know about you, but when it’s cold outside, the weeks start to feel even longer…..it’s weird.  So, we need a good, solid cupcake to get this weekend rolling, right?  How about these Chocolate Coffee Cupcakes with Coffee Buttercream Frosting (recipe below from Roxana’s Home Baking) and today’s book: The Mental Floss History of the World by Erik Sass & Steve Wiegand?  That should do it right?

The cakes are dense, but not tough, and a fairly moist, but not wet.  They have a light chocolate flavor, but the coffee is the real VIP in this cupcake.

Coffee-Buttercream

The frosting feels exactly like a typical buttercream – smooth and easy to pipe.  The frosting is a bit of a surprise, cause it’s looks like vanilla buttercream, but the coffee flavor is very strong! It tastes almost like a sweetened black coffee though.

The chocolate manages to be stronger when the parts are put together. Though coffee is still the super-star for sure. If you don’t love coffee, you won’t love this. If you do, you probably will. The chocolate on top adds a nice touch of chocolate though, that helps the overall taste.

Notes: The minis are a fairly accurate version, but the balance is better in the full-size.

Chocolate Coffee Cupcakes with Coffee Buttercream Frosting (recipe from Roxana’s Home Baking)

Chocolate coffee cupcakes
  • 1/2 cup (113 grams) room temperature butter
  • 1 cup (200 grams) sugar
  • 2 eggs
  • 1 cup Gelavia brewed cold coffee
  • 1 3/4 cup (210 grams) all purpose flour
  • 1/4 cup (20 grams) unsweetened cocoa
  • 2 tsp baking powder
Coffee buttercream frosting
  • 3/4 cup room temperature butter
  • 3 cups powder sugar
  • 1 tbsp Gelavia brewed cold coffee
  • 2-3 tbsp heavy cream
